We got the L'assiolo recommended by a local guy from Matera and just showed up. We were welcomed very friendly and personally by the owner and got a delicious meal, prepared by the owners wife, starting off with 9(!) different antipasti! We arrived late as walk ins and paid the standard fare of 70 Euros inlc. breakfast. The rooms are standard size (fairly new) and nicely furnished (half of it IKEA style).
