I think there is something wrong with the current Tripadvisor ranking (approx. 30th in Paris) for this hotel. We travel extensively, and would not rate this hotel quite so highly.
We stayed on a balcony, street-facing room in December.
First, the fixtures and bedding have not been renovated in an excessively long time. The beds are at the point where the mattresses are sagging. The sheets on top sandwich old blankets between them. The inner top sheet on our first night had holes in it. The quality of the towels varies from reasonable to threadbare. There were industrial-grade plastic "twist-ties" holding a lamp together. The daybed cover had been patched with similar-patterned material. Etc.
Some other points regarding the room. It was of a reasonable size for Paris - larger than my usual Paris hotel. The bath was not exciting, but was in better shape than the sleeping room. The heating (in December) worked quite well.
The location is a mixed bag. Yes, our room looked directly out at the Pantheon, which my wife greatly liked. However, that is a very large square with a parking lot. At night, drunks tended to gather there. Unfortunately, one night, this became an extreme problem. There was a significant number of youths hanging out and drinking beside their cars. They would scream intermittently, particularly at passersby. Even with the windows shut, it was impossible to sleep. Eventually, around 3AM we called the desk. After some more time, the drunken party was removed. However, another (related?) party returned some time even later, and it was quite noisy again. Amazingly, this was in December.
The desk staff were very friendly. However, we did have a problem with restaurant suggestions. We asked for some help with a restaurant for a special evening. The desk person set up a reservation at a hotel-restaurant, where we were surrounded by American tourists. As my wife specifically asked for a very French restaurant, this was inexcusable. (Yes, our French is quite reasonable.) Afterwards, I went on the web, and found that that restaurant had previously appeared on our hotel's blog. Very strange.
All in all, the hotel is "OK", with the view of the Pantheon being the main attraction. However, be aware that the Tripadvisor ranking should be somewhat lower than its current ranking of 30. I saw this occur with another hotel a few year's back; that hotel did eventually move back down to an appropriate rank.

Several points have to be corrected:
- since receiving negative comments about our mattresses around six months ago, the hotel owner decided to invest and change all of them. It is impossible that our mattresses are sagging, as they are brand new! (maybe that’s why people usually mention the quality of our beds)
- we change towels constantly and buy new ones every six months
- sheets are not our property and we have great confidence in the company which cleans them for us : it may occasionally happen that one has a defect that we do not immediately see, but as soon as we are notified of it, we change them for our guests and the company disposes of them. I sincerely regret you didn't come to see us to mention this, as we would obviously have acted immediately.
- we have chosen to use blanket (and these are new, not old) instead of quilts for some hygiene reason: thoroughly washing sheets and blankets is easier than washing quilts, and can be done more often without adverse effects on the fabric.
We are pleased that you appreciated the size of your room.
The rest of your comments, personal feelings about your stay, seem to be a misunderstanding about what the Grands Hommes is: a boutique hotel, in the heart of the Latin Quarter with a priceless view onto one of the top historical monument of Paris (rather than an avenue with constant traffic or an apartment building opposite).
Looking at your TripAdvisor profile, it seems that you generally choose big chain hotels, which we feel provide a standardised experience but without much charm.
The 443 pictures posted by our guests are visual proof that future guests may use to gauge our quality and exceptional position in Paris.
Our hotel is double glazed, and any external disturbances are referred to the police when necessary.
Also, it’s a shame you didn't appreciate our recommendation for a French restaurant... Paris is visited by 29 million tourists every year, and the best restaurants in the city will always have a cosmopolitan clientele.
And there is nothing strange about the restaurant featuring on our blog. We always try to test the best places for our guests, and there is no commercial arrangement between us and the restaurants in question. I hope you were not insinuating otherwise.
And finally, I’m sorry you don't think we deserve our 30th place on TripAdvisor (out of 1,840 hotels in Paris). We are generally classed higher, and work constantly to ensure that our guests are absolutely happy with their stay. A look down our comments should give a balanced impression of the hotel.
