I am originally from the Zoque ethnic group of the Chimalapa community, Isthmus Region, in the state of Oaxaca, I come from a traditional chocolate-making family, here I will be able to share my experience and knowledge that I have acquired over the years.

They educated us on the chocolate making process; the different kinds of cacao; the differences between traditionally/ancestral process of chocolate making and the corporate version of chocolate we find in super markets. We also tried a bunch of varieties of local cacao beans, cocoa nibs, chocolate bars and had the best cups of hot chocolate of our lives. - Mark7910 contributionsFor chocolate lovers visiting OaxacaMy wife and I did a 3 hour visit learning about the history of chocolate in Mexico and how chocolate is grown, harvested and processed into the chocolate drinks and products that I in particular love! We learned about the different types of beans, shelling them, roasting them, grinding them, adding sugar and then enjoying a chocolate drink, leaving with the bag of chocolate we had processed. Our host was very knowledgeable and amicable during the 3 hours. Highly recommended for chocolate lovers! As a note, the location is at the back of the address, and not obvious as the front has no signage (apparently they can't put any up), so be persistent and walk through the front area until the store and chocolate area open up.Written April 6, 2024

- mapm20240 contributionsMUST-DO when visiting OAXACA!!This was such a lovely and immersive way to experience Oaxaca! We did the cacao tasting which offered around 20 different things to taste––I lost count! There was about 5 cacao variants and we tried them in their different stages of the process, plus desserts! It was the best chocolate I had in my life! My partner and I bought many products afterwards to take home. Our host, Azomalli, was very knowledgeable not only in the cacao/company but in Oaxaca, as she is a native. It was so interesting to learn more about the culture of the city as well as the intense process of making cacao/chocolate. We appreciate chocolate so much more now! And love drinking cacao in this way now. We also learned how common there are fakes :O We learned so much. The owner, Ervit Hernández, comes from Santa María Chimalapa, the jungle region of Oaxaca, where cacao is very important. All the cacao they use in the company comes from this region, as well. It is truly a gem of a place as compared to any place in the world. We visited Oaxaca from chicago and were absolutely lucky to discover this incredible private tasting we enjoyed here with Diego and the owners. Diego is one of those magnetic people who is full of integrity, knowledge, and kindness and educates you through the magnificent and one of a kind elite and world class chocolate you find in Oaxaca. From the moment we entered to 2.5 hours later when we left, we were in a world of chocolate/gourmet fascination and indulgence that is unparalleled. We learned about the cacao fruit and its roasting process. After doing a great tasting of nibs and chocolate, we threw on these gorgeous Oaxaca textile aprons and roasted our own cacao beans on an old fashioned clay pan, shelled the beans, ground them by hand in a hand cranked mill, and blended / made our own hot cocoa - best I’ve had in my life. It was a lot of chocolate and an incredible amount of captivating fun - even from our 7 and 10 year olds. Then you get treated to some of the freshest baked bread with fresh strawberries and cacao nibs for a balanced and delightful treat alongside your hot cacao. This is a singular experience that cannot be beaten anywhere in the world and the $75 per person we paid for it (Jan 2024) is so incredibly reasonable for the flavor, effort, quality, and intellectual property that we enjoyed. We even purchased some unique white bean chocolate to take home which tasted on sunflower seeds and fresh roasted nuts. Just WOW! Thank you Diego and the Chima team.Written January 23, 2024

Our instructor was very passionate, knowledgeable, articulate, and friendly and so were the whole team. That combined with the cool ambiance and decor of the space made this experience so fun that after 2+ hours I didn’t want to leave. It was really cool to learn about cacao and the hands-on part of making your own chocolate from scratch was remarkable. Our whole family loved this experience! Diego was so knowledgeable and we learned a lot, but he also made it so much fun for the whole family (with kids ranging in age from 4 to 13). We loved getting to make chocolate ourselves and try so many different types and flavors. We learned about cultural traditions, different types of cocoa beans, and how chocolate is made. Highly recommend!!

Do not miss this gem in Oaxaca! I signed up last minute for a Cacao Experience which entails learning the local history and origin of cacao, a full tasting, and hand making your own chocolate (their are lots experienced to choose from, I enjoy the history portion). Asa was my teacher/guide/all things amazing and we had SO MUCH FUN! She loved her job just as much as she loved the chocolate and its quality itself. Everything is handmade and locally sourced, so even if you take a peak and buy one of the best single origin chocolate bars or the beautiful bags of cacao, you won’t regret it! 10/10 would recommend! Thank you Chimalapa Cacao!

We visited as a family, 2 adults and 2 young children. It was so much fun and enlightening at the same time! Our youngest is 2YO, everyone was very patient and kind with hee and very engaging with our 6YO. The chocolate was so good, i wish we could have it every day!

I have been looking for a workshop about cacao production in a lot of places in Mexico and I finally found a fountain of wisdom and the knowledge. I had a magical time listening about cacao origin and making my own pure cacao from the seed. To me, cacao is a magical plant and I am so happy to find a place where it is treated with so much love and respect. I feel very inspired and happy to understand more about this ancient plant. It has been more than a pleasure to learn more and at the end to have a cup of the most tasty cacao I've ever had. I wish Chimalapa Cacao to continue their incredible work and share the magic of cacao. Would recommend workshops with them to everybody.

This is an amazing chocolate course taught by true artisans! The owner and operators are very kind, informative and great at providing information and inspiration to explore and protective this amazing plant - cocoa. The class is laid out in a really interesting way with a lot of tasting and sampling cocoa in it's various forms. The hands-on making of the chocolate and drink was the best I've taken (I've taken a few chocolate classes in other places). While it is listed as a private class, this was a small group (I was paired with another person whom I didn't know) and we got a long great which made it more fun. The facility is in the City Center and easy to walk to if you're in the area. It's in a beautiful charming old building, beautifully decorated, the folks spoke great English for us. I learned a ton of information that I will take into my future when buying and tasting chocolate, I left feeling more aware of the challenges facing cocoa and want to protect it! It was well worth the investment!

We went to this chocolate making class yesterday. We have a 2 year old so we were a bit apprehensive about keeping her occupied during the class. But it went so well we could not have asked for a better experience. The space was relaxing. The class was fun and interesting. And our daughter absolutely loved Ingrid and Ruth. We definitely recommend this class.

BOOK NOW! Don’t think twice, the highlight of our trip. I’m a chef and would consider myself knowledgeable in chocolate but that was all gone after this workshop. They open my eyes to a new universe! They are extremely knowledgeable and hand on. This is a must when visiting Oaxaca!!!
