Buonasera. E' buona usanza anticipare, la visita presso di noi , con una e-mail. Se avesse scritto Le avremmo risposto che siamo, attualmente, chiusi per ferie annuali. Il nostro non è un negozio, ma un pastificio dove produciamo pasta; quindi come tutte le aziende facciamo le ferie e la manutenzione degli impianti. Bastava che venisse in via de Pastifici, 3 avrebbe potuto constatare di persona. Ben volentieri facciamo vedere, gratuitamente, la lavorazione. Cordialmente. Dino Martelli

Good guided tour (15-20 min.) around this family run pasta factory. Explaining how pasta is made and showing a few machines in action. The products can be purchased next door. I would call it a “must do” in Lari. Enjoy!

It was an interesting view of pasta making with explanations on the different kinds of wheat flour. They use semolina which is healthier than white flour as Semolina is coarse not fine. semolina is made from a rougher variety of wheat, which is why it has a yellow colour. ... White flour, on the other hand, is rich in simple carbs without fiber and protein. We saw different machines used and held and tasted pasta. It was a quick tour given by a Marteli family member. They did not serve meals or drinks.…

I emailed Luca and arranged a visit to the factory. It is small and family run and although it does not take long to go round this is a must if you are in Lari. Luca was really nice and his English is good.

Martelli Pasta Factory is Tucscany at its best. Its a small factory owned, operated, and staffed by very friendly family members in a compact setup of equipment, raw materials, and packaging. Out of this little factory comes some of the best pasta in the world. We consume a lot of pasta and Martelli is at the top of our list so we made the factory our first stop on a private car tour of Tuscany. I mention this because we were the only people at the factory but no matter, they gave us a thorough private and personal tour. We happened to be there on the one day a week they stop production and clean/maintain the equipment. Again it didn't matter as it was easy to see everything, even the "in production" pasta hanging on racks. A bonus here was the village of Lari, a small medieval walled village with a castle. The central square had a couple of quaint untouristy shops and a cafe with outside tables. Even if you are not into pasta I think this is a must stop for Tuscany visitors. We carried home several bags of pasta.…
