Although this is the busiest of the roads, there are a lot of view points and if the ones nearest the Visitor Centre are particularly busy just go up to the end and work your way back.

Great place to visit. We did not camp, just visited South Rim Visitor's Center. Beautiful views from the center, and movie was interesting and gave a good overview of how the canyon was discovered.

You can drive along and choose the rims you want to stop at. We went to the visitors center overlook and the awesome Painted Wall. 200 ft walks on well defined paths.

Probably not on the driving part. I would say it depends on how severe the phobia is.
