Hola y muy bienvenidos! As in all cultures, those born and raised in the society are the best source of knowledge about traditions. As a Mexican native, I inherited my Mexican cuisine knowledge from my previous generations. And my passion too! From my earliest years, I watched my mother, my aunts and grandparents in the kitchen, so I invite you to join me in tranquility to take our aprons and spoons, to use the very fresh ingredients of our Mexican Cuisine, and recreate together those delicious dishes. I love sharing my knowledge about one of the most varied and delicious cuisines in the world. I take pride in customizing my classes to suit the needs of all students -that don't have to stick to a fix classes program calendar- in my cozy kitchen with its antique Mexican molcajetes and metates. Just contact us to arrange your own hands-on class with a maximum of 4 students per class to insure individualized attention to each. Classes are from Monday to Friday, starting at 10:00 am. A special schedule can be arranged for private groups. A minimum number students apply for each class. We offer open custom classes for short stay students and professional intensive courses.

What a wonderful experience. Marilau is not only an excellent teacher, but she has a real depth of knowledge about the traditional cooking of the various regions of Mexico. And her passionate interest and support and love of the transmission of tradition is evident in her teaching. I learned so much beyond just techniques, although I learned many techniques too.... We couldn't have had a better cooking class experience. We took the Intro to Salsa class. Marilau packs a lot into the class and we had hand-on experience preparing six different types of salsas. The room is comfortable and attention is paid to detail (like a mirror over the stove) so its easy for everyone to see what is going... More

Our family of 5 (parents plus 3 older teens aged 21 girl, 19 boy, 17 boy) considered this one of our absolute highlights during our visit. Marilau has dedicated the past 27 years to teaching cooking classes to visitors, and she does so with such a genuine passion for Mexican cuisine and its rich history that you are positively engaged... Marilau is a fine cooking teacher with a long history of wonderful cooks in her family. The cooking classes include traditional, authentic Mexican cuisine in a comfortable, warm setting. This is a hands on experience, working with local ingredients with time-honored recipes. As a former cooking teacher, I can vouch for the quality of the instruction and the product.

We liked our class so much we went 2 days in a row. Marilau is an excellent teacher, a great conversationalist, and very patient. We loved everything we made. Red and green salsa, tortillas, tamales, a wonderful soup and meatballs. This class is worth every peso!

Marilau's class was fantastic -- just what everyone here describes. But what made it over-the-top great is the fact that she has added so much to our repertoire of good dishes to make! We've only been back for two weeks, and have already made her salsa verde, enchiladas, huevos rancheros and huevos a la mexicana (twice). Today we're making her... More

My daughter and 15 yo granddaughter took a class from Marilau which was terrific. She explained everything so well to the 3 of us and made it perfect for each of us who are at different cooking levels. And the food was wonderful!! I'll never have Uncle Ben's Rice again!

We took Marilau's 3 day Cooking with Chile's class in June and were wildly pleased with the experience. My two girlfriends and I are cooks, foodie's and well traveled. We appreciated the care with which Marilau included serious technique, food pairings (with different chile's and sauces), her family and Mexican history, geography and culture in her lessons. She is very... More

We took 2 of Marilau's cooking classes, and absolutely loved it! She is a "purist" as far as Mexican food is concerned, which I so admired! My husband and I, and our "couple" friends that we traveled with, had a private 3-hour class each day. From explanations about the foods we were going to be using, prepping those foods for... More
