Hola y muy bienvenidos! As in all cultures, those born and raised in the society are the best source of knowledge about traditions. As a Mexican native, I inherited my Mexican cuisine knowledge from my previous generations. And my passion too! From my earliest years, I watched my mother, my aunts and grandparents in the kitchen, so I invite you to join me in tranquility to take our aprons and spoons, to use the very fresh ingredients of our Mexican Cuisine, and recreate together those delicious dishes. I love sharing my knowledge about one of the most varied and delicious cuisines in the world. I take pride in customizing my classes to suit the needs of all students -that don't have to stick to a fix classes program calendar- in my cozy kitchen with its antique Mexican molcajetes and metates. Just contact us to arrange your own hands-on class with a maximum of 4 students per class to insure individualized attention to each. Classes are from Monday to Friday, starting at 10:00 am. A special schedule can be arranged for private groups. A minimum number students apply for each class. We offer open custom classes for short stay students and professional intensive courses.

We liked our class so much we went 2 days in a row. Marilau is an excellent teacher, a great conversationalist, and very patient. We loved everything we made. Red and green salsa, tortillas, tamales, a wonderful soup and meatballs. This class is worth every peso!

Marilau's class was fantastic -- just what everyone here describes. But what made it over-the-top great is the fact that she has added so much to our repertoire of good dishes to make! We've only been back for two weeks, and have already made her salsa verde, enchiladas, huevos rancheros and huevos a la mexicana (twice). Today we're making her... More

My daughter and 15 yo granddaughter took a class from Marilau which was terrific. She explained everything so well to the 3 of us and made it perfect for each of us who are at different cooking levels. And the food was wonderful!! I'll never have Uncle Ben's Rice again!

We took Marilau's 3 day Cooking with Chile's class in June and were wildly pleased with the experience. My two girlfriends and I are cooks, foodie's and well traveled. We appreciated the care with which Marilau included serious technique, food pairings (with different chile's and sauces), her family and Mexican history, geography and culture in her lessons. She is very... More

We took 2 of Marilau's cooking classes, and absolutely loved it! She is a "purist" as far as Mexican food is concerned, which I so admired! My husband and I, and our "couple" friends that we traveled with, had a private 3-hour class each day. From explanations about the foods we were going to be using, prepping those foods for... More

My boyfriend and I were visiting San Miguel with a group of friends for a wedding and I reserved a cooking class with Marilau to learn how to make tamales. We are both avid cooks, so this turned out to be the highlight of our trip. I have to admit I was a tad bit intimidated by Marilau for the... More

as native new orleaneans, we live to eat; so, cooking is part of our culture. as an accomplished cook, i was really interested in learning Marilau's techniques to bring a flavorful mole' to completion. per our request she made the entire 1/2 day class just about all things mole'. she knew we were serious about this request and she left... After reading all the great reviews a group of us foodies and cooks were very excited to try Marilau's class for our first visit in San Miguel. The class was disappointing. I"m not sure if Marilau was having a bad day but we weren't greeted warmly. There was no fun conversation and a few times a couple of us were... More

My only regret was not booking a longer class! We booked the morning of and walked to the cooking school (a little far but you'll need it to digest). We learned how to make tortillas, sopas, and enchiladas... then had a great time eating them. Marilau was great and very knowledgable and passionate.
