If I could, I would rate this 10 stars.

If I could, I would rate this 10 stars.

Chef Guido & Sally shared a deep knowledge and passion for food and local culture with us and to all who visit them virtually and in person.

Their openness to share their home and family recipes, makes you feel part of their family. This is an experience we will not forget and will repeat virtually and hopefully one day again in person.

To date, we have had now 2 experiences with Chef Guido & Sally.

The first was a virtual cooking class to celebrate Valentines Day and came from a recommendation from a friend. Together we made gnocchi with a red sauce, learned knife skills and more about the Italian and Roman culture and when the best time to visit in person would be.

Our second experience, was during our honeymoon where we met Chef Guido & Sally in person, taking a class with 3 other people. We were welcomed with simple, personalized, easy to follow instructions how to use the train from Rome to Fara and could easily communicate with Sally on our venture to the countryside. We made a lovely 3 course lunch; from scratch fettuccine, chicken and a ricotta torte. Made with all local ingredients including herbs from their garden, fresh bread and cheese from the local Shepard.

In both instances, they were flexible with our dietary needs, crafting a unique menu for my husband's shellfish allergy and my avoidance of beef or pork.

When in Rome, take the trip to visit with them... a 1 day or a 4 day or even a 5 day! Just make the time.

And when you're at home, schedule a virtual class, which will be just as engaging and something you will want to repeat and recommend to family and friends.

Grazie Mille to Chef Guido & Sally. Arrivederci!

Thank you so much for your wonderful 10 Star Review! Fabulous! It has been such a pleasure to meeting you both IN PERSON for your One Day Cooking-Touring Experience, after meeting you virtually online for a cooking class with Chef Guido! We also felt like we were having friends over to our family home and loved how relaxed and how we all had so much fun cooking and touring together. Guido and I were so pleased to hear that you enjoyed your day, from start to finish, as much as we did! It's a crazy world at the moment and to be able to meet new friends, like you, online first and then you meet you again in person as guests in our home, is wonderfully mind-blowing! Thank you, again, for your amazing '10 Star' review of your online and in-person cooking class experiences with us. We wish you both a wonderful new life together and a future filled with happiness, joy and good health. We hope to see you again, very soon, online and/ or in person. Beautiful Experience - my favorite vacation
Sep. 2021
WOW, just WOW! Please just do it. Sign up, pay for it, take this class. It’s a really good one, friends, and you can totally make this your next favorite vacation! It’s affordable and will fill your heart with experiences and memories for a lifetime.
What an amazing experience we just had with the Convivio Rome Cooking Class! We were a group of six with varying degrees of culinary skills and we all learned something new over the course of five days.
This is a hands on way of learning to cook something new and traditional. Just to name a few of the things we created: we kneaded and rolled our own pasta and served it with a lovely meat sauce – it was delicious. We crafted an authentic Roman-style Pollo coi Peperoni – chicken and peppers (I plan on making this for my family soon); we learned the CORRECT method to make risotto (creamy and dreamy!) and a really good ricotta/sour cherry tart (that crust!). But that is not all. We also had a few local wine and olive oil tastings plus walking tours of the surrounding area.
The countryside where Guido and Sally live is spectacular. When we were not taking pictures, day dreaming over the views of the Sabine Hills or the nearby olive groves and vineyards, we were learning how to prepare and cook a few things! Chef Guido is informative and very patient. He did not hurry us through any part of the process and the results every day were spectacular. Sally, his wife, is kind, generous and knowledgeable of the area they call home in the Sabina/Sabine Hills.
We did not stay in their villa but instead in two beautiful little apartments in medieval Toffia, just a few minutes away. I fell in love with this little picturesque commune with all of its grey cobblestone and 9th century castle-y charm. Look it up – you won’t be disappointed. I am going to take this opportunity to high five the proprietor of the outside café where we had a coffee every morning. Each day she wore a glam t-shirt just for us and since she didn’t speak any English (and we didn’t have much Italian to offer back) this was her way of welcoming us to her wonderful establishment.
This 5 day cooking class with Guido and Sally was just part of an incredible 15 day adventure to Italy ❤
Sally and Guido – we all miss you and thank you for being a part of our amazing experience !

Wow, I say Wow, too! What a fabulous review of your 5 Day Convivio Rome Italian Cooking Holiday with us. It really was amazing meeting you and your friends/travel companions and we loved the positive energy you exuded, from the very beginning to the end of your time with us. Thank YOU for appreciating every single moment of your Italian experience. I also love your extra mention of the cafe owner, Roberta, she was so happy that you came along to her cafe everyday for breakfast, and was sad to see you all leave. We are so pleased that, while staying in our little medieval village you all had the opportunity to meet with some of the locals! We also miss you all and hope to see you again very soon, whether in person or online, so we can share our special part of Italy with you, all over again.

Magical Culinary Experience!
Sep. 2021
Sally and Guido were awesome hosts, I could not ask for better! We were six friends looking for an exceptional Italian trip and I found the 5 day Cooking Holiday. From the moment I reached out to Sally to the day we left, everything was taken care of for us.
We stayed at apartment in the medieval village of Toffia, living among the locals is an experience everyone should have. Fresh, clean and awesome views and you get a little exercise in from the hills. Our cooking classes were so much more than I expected! Guido is a superb cook and teacher! All of us had so much fun and learned so many tricks and tips from him. We made the most awesome pasta, veal saltimbocca, risotto - just to name a few of the 3 course meals we cooked!
Guido's love of food and his beloved Rome clearly shines through as guides us through the classes and tells the history of Toffia and his home surroundings. He shared his knowledge as we walked through a vineyard and toured a winery.
This is not all though, there are a lot of little things that happen which enhances your stay that I will forever smile when they come to mind.
Believe me when I say, if you are looking for a Magical Italian Experience ~ this is the one for you!
Sally and Guido are the best and they will take care of you.
I miss them already and want to go back!

Best vacation ever
Sep. 2021
Sally and Guido not only opened their home for our cooking and eating experience but also arranged our stay in the absolutely charming medieval town of Toffia in the Sabine hills. We toured a winery, learned about the how wine is processed, stored and bottled—with some tasting along the way. We also saw olive groves and learned how to determine good olive oil. Our hosts put so much thought and planning into our visit. I highly recommend this holiday as a true Italian experience never to be forgotten.

Thank you so much for enjoying your 5 Day Italian Cooking Holiday with us, in the heart of Italy. So pleased you enjoyed staying in Toffia, our little medieval village just north of Rome. It really feels like worlds away, doesn't it?! Thank you also for appreciating all the different aspects of this Vacation and how we have taken many different experiences and put them altogether!....... combining local wines, extra virgin olive oil, authentic Italian cooking and visits/tours to the local countryside and other close by medieval villages and monasteries, with a unique experience of 'living like a local' within the walls of a magical medieval village. Thank you for taking the time to write your review, we really appreciate it! We are so pleased that you enjoyed your stay with us and hope to see you again soon, in person or for one of our online cooking classes.

Highly Recommend!
Sep. 2021
The one-day class represented for me the best Italy has to offer: warm and knowledgable hosts, delicious food we (mostly!) made ourselves, in a beautiful setting just a short train ride from Rome but feeling like a time-machine to a medieval world. Sally and Guido could not have been better hosts and my four fellow guests felt immediately like friends. There was a nice balance of sightseeing, guided learning, relaxing, and of course enjoying great local food and wine.

Thank you so much for your wonderful review. I am so pleased you enjoyed your One Day Cooking-Touring Experience with us (Sally and Guido). It really felt like a group of friends coming over and we are so pleased that you all got on so well together. It was a lot of fun for us, too. We were also so pleased to meet you in person, after you being a member of our online monthly cook club, Guido's Cook Club, for the past 8 months. Chatting to you online for all those months made it feel like we were just reconnectiong as friends when we met for the first time in person. Wonderful! We hope to see you again, very soon.

Wonderfully unique experience just outside of Rome
Aug. 2021 • Friends
Sally and Chef Guido provide a completely unique & personalized experience in the beautiful Italian countryside just outside of Rome. After an easy train ride from the city, Sally gave us a fascinating tour of a local medieval village and explained the history of the area. Then, they welcomed us into their home for an engaging cooking lesson & traditional meal. I have a gluten allergy, of which Chef Guido was very accommodating. Both Guido and Sally are incredibly warm and hospitable.
It was absolutely wonderful to get off the beaten path and away from the hustle and bustle of the city for the day. We got a real glimpse into Italian country life, past and present, witnessed the beautiful countryside and villages, and learned to cook a delicious meal in the process. I will be recommending Convivio Rome to all of my family and friends traveling to Rome!

Thank you so much for your wonderful review! It was such a pleasure meeting you, your sister and your mom and taking you around our neighbouring medieval village, and into our family home, here in the Rome countryside to cook a wonderful two course traditional Italian meal together. We are very happy to adapt the cooking class and recipes to what is in season and also to any food allergies that our guests have. It makes it even more fun for everyone. We also had a lot of fun and really enjoyed your questions and enthusiasm to learn more about our beautiful country and it's food and culture. All the best to you all and we hope you have a safe return journey to the US.

Fantastic experience
Aug. 2020
We did a half-day cooking course and loved every minute. Sally and Guido were great hosts; very friendly, knowledgeable and easy to chat with. It was a great experience, cooking against the backdrop of stunning views across the valley and hills and using high quality local products. Sally and Guido shared lots of interesting tips about the area. They were very good at accommodating for our food preferences, and the end result was delicious. Highly recommended.

Lots of fun
Oct. 2019
We weren't disappointed in our one day class with Sally & Chef Guido. Sally met us and showed us around the lovely countryside and medieval villages. Then off to their hilltop home for class. Guido is a great teacher, showing his cooking skills and teaching them. We were hands on most of the time and we made pasta, a red sauce and lemon dessert. We then ate on their lovely terrace with wine and beautiful views. It was heavenly. Sally & Guido are friendly and easy to converse with. You won't regret taking a day to relax and enjoy Italian life.

Accomodation and Cooking Class
Oct. 2019 • Couples
The best five days ever. Accomodation in medieval Toffia was a great experience. A bit of walking for a couple of ancients like us, but we persevered and were fitter by the end, than when we started. Guido and Sally were great hosts and made sure everything was to our liking. The cooking class and the personally hosted tours of the surrounding Sabine Hills were wonderful. As to the cooking class. Never again will I use just one tablespoon of olive oil to my Italian dishes. The meals with the other class participants from our own efforts and the evening meals, shared with the others in a medieval home and stable, were just fantastic. Overall the best value for money time we had in our five weeks in Italy. A great big thanks to Guido and Sally.
