This is certainly a great place from which to view Toledo, but just above is the Parador where the view is better and you can enjoy a snack, a lunch, a coffee while enjoying one of the best views in Spain

There is a Hop-on, Hop-off bus every 20 minutes. A day ticket  costs 9€ for the day. Half price for pensioners. You can also get a 10% discount if you have your ticket from another city's hop-on, hop-off bus [It's a worldwide company called City Sightseeing - check Google]. It's one of the best value for money deals in Toledo. Ear phones are provided and commentaries are in multiple languages. The Tourist information office have details of all the stops. The Mirador is a viewpoint on the opposite side of the river where the bus stops and waits while you can get out and look or take photos. If you want to stay and visit a restaurant, you can get a later bus, but you have ample time to take photos and get back on the same bus.
I don't know about a bus that is not hop-on, hop-off.
