About
Trustevertastes, your cooking experience, learning about a culture through a cooking experience. We start every morning meeting you in one of the oldest market place in the ancient Rome, Trastevere; we buy what we will cook we proceed with a walking food tour through through the neighborhood. We then reach our location in a building of 15th century with the windows overlooking the magnificent Santa Maria In Trastevere basilica and its square. Be prepared to an experience through the Italian cuisine tradition you will cook an Italian full menu and you will enjoy your lunch in the elegant dining room. We will do our best to make your experience memorable, and will take away with you tastes smells and traditions as a souvenir.

Masterclass experience! Thank you Paula and Lili for an unforgettable evening of authentic Italian “chefing”, lots of laughs and fun. What made this unique was our ability to customize the menu and the amount of hands on experience we and our daughters (19 & 20) were able to gain. Highly recommend if you want to learn authentic Italian recipes beyond the standard pasta, sauce and tiramisu offered elsewhere. An unforgettable memory made in Rome!

Our cooking experience with Paolo and Lillie was fantastic and memorable. We began at the local market shopping for our fresh vegetables and fish .From there we walked to the local butcher to select lamb for the ragu sauce. Then, to the Italian market for cheese and spices. What a wonderful time we had. Paulo and Lille are gifted instructors.
We learned to make many pasta sauces, including marinara, lamb Ragu, Carbonara, and two pesto sauces. We made our own pasta dough. We prepared artichokes that were delicious. After the preparations were finished, we sat down to enoy all the dishes we prepared, and enjoyed wine with the meal. We laughed, had fun, shared stories and were sorry to see the day end. We truly had one of the best experiences during our visit to Rome. Thank you Paulo and Lillie. We will be back!!

We just returned from a vacation to Rome and the Amalfi coast. The cooking class with market food tour was definitely a highlight of our vacation. Loved it so much that when I return to Rome in May with a different companion I plan on doing it again. First we met up with Lilli, then settled on a menu and proceeded to shop for our meal. Once in the school (a magnificent apartment), we began our preparations. We made a pasta dish, several vegetables, a chicken dish and panna cotte . In between our cooking, we took a break and feasted on a fabulous antipasto. We enjoyed excellent wine as we cooked and with our meal (served in the elegant dining room). When it was time to leave, we felt like we were saying goodbye to a close friend.

We visited Trust Ever Tastes on my son’s 9th birthday whilst enjoying a family holiday in Rome. It was a magical experience from the moment we arrived (with balloons on the door - lovely touch). We made three different gelato and my boys (aged 9 and 6) were captivated with the right level of instruction and engagement throughout. The ice cream was DELICIOUS and our hosts were exceptional...it felt a truly authentic experience chatting in the kitchen with the warmth, good fun and good food we associate with Italy. Thank you Paula!

We booked a pasta cooking class as our teenage boys love pasta. Paola and Lilli were excellent instructors. We made an amazing Ragu and Carbonara. After a few hours of preparing sauce and pasta we sat down to an excellent meal. Now all of us have a great appreciation for anyone who prepares pasta. There were cheeses to eat, bread, pasta, and wine. It was by far the best meal we had in Europe! It did take four hours so budget your time for this. Thanks from your Florida and Georgia Families

First, let me mention that I spent a lot of time looking at peoples’ reviews before we decided to book our class with Paola. We took the gelato making class and it was HORRIBLE! The description of the class is very deceiving. The description states that you will learn to make gelato with recipes you will take back home and use. It took the instructor THREE weeks after the class to send me the recipes AFTER I asked HER to send them to me! You can’t even make the gelato at home with her recipe because she uses a blast freezer that costs $3,000 US dollars. We THOUGHT we would be involved in the cooking process, however, Paola did everything for us. My kids were disappointed that they only got to watch and not make their own gelato! It was only 4 people from my family, yet she put us into teams! This only allowed us to make 2 flavors of gelato! When the class description said you would taste gelato, it meant you would taste gelato OTHER people made from previous classes! When we were making the gelato, Paola used “heaps” instead of tablespoons or teaspoons - what the bleep is a heap??? We used pasteurized egg yolks to make the gelato but NOWHERE in the good old U.S.A. Have I found pasteurized egg yolks!!! Maybe Europeans can make gelato with her recipes, but not in America! Overall, this class was a waste of more than $400 US. I absolutely would not recommend this class to anybody visiting Italy!

I wonder to replicate by knowing your name to check the date we did, if something specific occurred but seems that being anonymous is what you prefer.
I like to learn in any situation occuring in my life, is my philosophy. We always send the recipes because when we hand them in the past, guests were claiming to have a digital copy to save on their pcs so we changed. We always send recipes within 10 /15 days after the class date as in high season we spend more time in kitchen that at the desk.
1) WE NEVER SHOW how to make the gelato, EVERYBODY works in TEAM by 2 and make it from scratch. If you had a class with us you should know.
2) YES there are many tastings : from the other classes and 1 one done by us that is usually a cream served with freash fruit plus also the one you do it. And if you had a class with us you should know because this happens every time.
3) Yes we use pastorized EGGS yolks and during the lesson I also inform that you can buy pastorized eggs in the States and separate to use the yolks only. If you had a class with us you should have heard my explanations.
4) EACH participant to gelato class use electric wisk , little food processor to prepare the flavors, spatula to assemble the flavor to the egg base and to the whipped cream. THIS MEANS THAT YOU ACTIVELY ACCESS THE PROCESS for making GELATO as this is all we do. If you had a class with us you should know this because you did it.
5) Yes we use a Blast chiller because is the only way to have the gelato that cutomers are doing to be done in 20 minutes and allows you to taste what you have just done. But during the lesson we also say that when you do it at home then you need only to place in the freezer and you wait for the hours suggested in the recipes and according on the volume that you are doing. You DO NOT NEED TO BUY A BLAST CHILLER TO DO OUR RECIPES and if you had a class with us you should know.
6) I do not use "heaps" but I use to say " Heaped Tablespoons" because this is the sugar quantity required for each Yolks. If my english language is not clear I deeply apologize but being Italian I thought was quite fluent.
As I stated previously, I always like to learn in any situation, and I had some learning also this time and I have to thank you for this, My kindest and warmest regards

In Italy, food is the most important fabric of life. With Paola, you understand why life is beautiful in Italy after preparing an extraordinary meal and then enjoying it with your fellow chefs. As a family of 4 this was a great way take a break out of the more traditional site seeing of Roman ruins and see Italy instead!
It starts with a trip to the market where you taste the freshest possible local ingredients with Paola. You select the core vegetables and fruits for your meal that day. Next a stop at the local alimenti to get your protein and anything else you forgot, and finally swinging through the specialty food store to pick out some very uniquely Italian ingredients.
As a family we worked together with Paola to begin to prepare the longer to make items, and you get to chat about Italy, Rome, and if you are smart to hear about Paola’s life traveling the world over. Coming back to cooking later in her career, you can truly see Paola’s passion for food and sharing with visitors her love of local Italian ingredients.
A pasta making session that was an amazing opportunity for the family to checkout of the stresses of life and enjoy time together preparing from scratch the signature dish of all Italian food. Somewhere in the middle of this, you realize that this has been done by hand the same way by families for centuries.
It ends with sitting down with Paola and having a leisurely and beautiful lunch. And if you have English Setters, ask her about hers.

This small town is such a wonderful spot , musicians playing in the plaza and great food every where. Take a few minutes to check this place out, you won't regret it

Paola has a great personality and is a wealth of knowledge in regards to Italian cooking. We had a great day drinking wine, making pasta, carmelizing tomatoes, and enjoying her company. This class is a MUST DO if you come to Rome. The school is beautiful and the ingredients are delicious. FIVE STARS!

This was the most incredible part of our honeymoon in Rome! Paola was an incredible instructor. Everything from starting the day by shopping in the market, cheese shop and butcher to seeing her beautiful space where you cook, I can't say enough positive things. We learned to make a pasta dish as well as a lamb, salad and beans. Paola takes into account what you like to eat when factoring in what you want to cook. She teaches you in such an authentic way, the experience resonates with you. We actually came home last week and have already made the pasta she showed us two times. Do this and you wont regret it. It is a good way to take a break from all of the sightseeing in Rome and have a genuine experience.

our daughters are interested in learning to make gelato while we are in rome this summer. could you tell me more about this experience - how did you book? did they speak english? Is it really hands-on? how much was it?

Hi there,
many thanks for your message. Our gelato classes are only hands-on using an old recipe which has no need of using an Icecreamer machine. Classes are running every Thursdays and Fridays at 5 p.m. excluding holidays. We are going to be closed from 10 th August till 31st August.
