Chef Paolo taught us how to create masterful vegan Italian dishes. His humor and extensive knowledge of Italian cooking made for a wonderful day in the kitchen. Chef Paolo has travelled extensively and brings that knowledge to the culinary experience. It was hands-on, fast paced and leisurely at the same time. We loved eating everything we learned to cook.

If you want to get a literal taste of Tuscany, do not hesitate to book classes with Chef Paolo. I took many of his classes, with my favorite being the Seafood class. What a wonderful experience. I thought I knew how to cook Italian food. I was so wrong. Chef Paola is so talented he not only knows how to cook but he makes the lessons so interesting.
