At the entrance of the old medina, in a former almond warehouse, l'Atelier Madada welcomes you under its stone arches. By small groups (8 persons maximum) and supervised by a professional team (a cook and a trilingual presenter) our hosts discover the secrets of Moroccan gastronomy and are initiated into the delights of one of the best cuisine in the world. In a friendly and casual atmosphere, those half-day workshops teach each participant how to prepare a full traditional meal that one can then easily reproduce at home.

We had a superb day with Mona and Alison preparing and cooking our lunch, visiting Mohammed at his spice shop and consuming it all 😀👍🏻. The cooking was brilliant, but Alison opened up Essaouira for us with her local knowledge. Our visit to the town was better for it. Cannot recommended this experience highly enough. Thank you Mona, Alison and... More

My son and I booked a morning at l'Atelier Madada to learn how to cook in a Tangine First impressions count: the kitchen and training area were emasculate, everything needed was set out and waiting and our hosts Alison and Mona were friendly and professional The morning passed with helpful tips and clear instructions in an atmosphere of easy chatter... My daughter and I took a morning cooking class with Mona and Allison. We made courgettes chermoula and a lamb tajine with apricots and figs and both were delicious. The space was wonderful, the instruction interesting and the tour of the spice market fascinating. I highly recommend this.

Exceptional from start to delicious finish! Mona presented her class in beautiful surroundings with an equally beautifully organized approach. We made individual "bistilla" and a wonderful vegetable concoction.

My wife and I had a wonderful time with the chef and Allison. There was excellent banter interweaved between the local cooking knowledge and expertise. The trip to the spice market was insightful and learning about the tagines was certainly eye-opening. We highly recommend this extraordinary experience to everyone of all ages! Allison's daughter stole the show!

My boyfriend and I did a class just us two and thoroughly enjoyed it. The trip to the spice market was fascinating, the food was absolutely delicious and everyone at the atelier was friendly and welcoming. It was the perfect way to spend a morning in Essaouira and worth every penny.

If you want to learn more about cooking Moroccan food and you happen to to be staying in Essouira then I urge you to spend a day cooking with Alison and Mona. Before we went I'd had a few attempts at trying to cook various kinds of tagines but was never quite happy with the end result. After our day... More

I did a cooking class at l'Atelier in March, we made chicken pastilla and harira soup and it was delicious! Great instruction and lots of laughs. Beautiful surrounds.

Had a great time with our guide and the chef who were great fun (apologies their names escape us now as a number of months have passed..) in this half day savoury cooking course. We learnt about cooking with the tagine and went to visit the spice market for some additional purchases. A bit prices but worth it and definitely... More
