Amazing real-deal Japanese knife from a true craftsman! Stainless/high-carbon sandwich. Get the ones with the wooden handles as he made these himself. As someone who enjoys cooking it’s great to have a solid (it’s heavy!) tool and a memory to last a lifetime.

The man spoke very little English but knew the key words and communicated through drawings. He engraved my surname on my knife (in Japanese of course) and walked me through how to take care of it. Really glad with my purchase and the experience.

Good value but left handed knives may not be available. Vendor takes time with customers. Worth a visit if you go to the nearby Shibori Museum as well.
