AlXimia Winery is a very unique and completely different winery than what

you will find anywhere else in the world. Started by a mathematician

turned winemaker, this amazing winery was built by an innovative architect,

the mathematician-winemaker and his astronomer father.

It’s a 3 story round building that has been called “the flying saucer that

landed in the Valle de Guadalupe”, the “Cathedral of Wine”, or “a sculpture

disguised as a winery”. From the 2nd floor tasting room you can see the

whole winemaking process, as the grapes come to the top floor and travel by

gravity to the 2 floors below for fermentation, aging in French oak barrels

and bottling. The barrel room is underground and can be viewed from above.

You will be able to taste and buy their delicious wines – mostly

non-traditional blends that make the best of the Italian & Spanish

varietals that grow so well in these hot wine valleys. Alvaro (the

winemaker) is considered one of the best up & coming winemakers in Mexico,

and his wines have received multiple accolades – being rated 91 to 95 by

Mexico’s top sommeliers.

Great place to eat

We stayed at a nearby bed and breakfast and ate here on one of the evenings. The food was great and the fact that we could walk here was perfect.

We stayed at a nearby bed and breakfast and ate here on one of the evenings. The food was great and the fact that we could walk here was perfect.

On my second visit - always see something new and special. Tip - ask questions like a six year old. Take the tour if they offer. This place is just plain cool. They recycle everything and operate as green as possible with all of the elements.

It was four us and we had a relaxing, quiet and fun time. Winery is not very big and it has a nice cozy restaurant. House wine is very good and they make different ones. The design of winery is very different and tour is fun. Sit back relax and have a bottle or two and play a game outside.... More

An Interesting visit, a beautiful architecture and good service. The wines are fine, not great . The best of the place is Karen, the girl that do the wine tasting is the best of the experience.

This is a very unique place, the building was designed to catch water and use it in production. We were lucky enough to be there when it was raining and got to watch it in action. Food in the restaurant is good, the "recycled" herb garden patio is cool. The wines are excellent too! Probably the most important part!

Several of us friends enjoyed wine and lunch in this beautiful restaurant. The wine was wonderful and the food was amazing. The chef "Arturo" was very nice and made sure we were all having a good time.

Opens early. Very interesting, unique building, nice helpful people, great view and GOOD wine!! Highly recommend a must see.

The wines are excellent. Tasting starts at 5dls. The tour is the best we have been in El Valle de Guadeloupe. Personnel is warm and knowledgable.

The food was excellent. A group of 40 was served in good order, Moderately priced. Well worth the drive there. From appetizer to dessert, everything was fantastic. I visited AIXimia Vinicola as part of a wine tour. I have been here 2 times. The staff was nice. This Vinicola is in a cool building and has a cool concept, but I was not a fan of the wine.
