I'm thinking you could probably rent kayaks and do the river on your own. There is also the Wailua river where you can go kayaking, and if you can be there when the sea is calmer than on our last trip, there is always Napali and Poipu ocean kayaking!
The guide, however, took us to the waterfall, which you would probably never find on your own. We hiked quite a distance through the forest to get to that beautiful spot!
I don't remember what we paid for the half day with the guide, but I'm sure they have a website. Outfitters Kauai, and Boss Frogs rent various sports equipment. We have used them on several of the islands.

The kayaking part is strenuous as well. On the way back the wind blowing toward us increased the rowing effort needed. It is an adventure but I would advise if you are "very unfit" as you describe you might want to try a hike that is not quite as strenuous until you work your way up to going that distance.
