Hali'imaile Distilling Company produces handcrafted, locally made, authentic Hawaiian brand spirits. We are located in the heart of Maui's pineapple region, Upcountry Makawao, Maui. Our goal is to create "Hawaii in a Bottle." At Hali'imaile Distilling Company we set ourselves apart by starting with local ingredients and distilling in small batches, using unique stills, to create authentic Hawaiian spirits. Every part of our Distilling process is one of a kind and designed in house. Once distilled, our spirits are mixed with crystal clear reverse osmosis Hawaiian water. Upcountry Maui is not only a place, it's a lifestyle. Hali'imaile Distilling Company is located in the small town of Makawao, home to the Paniolo (Hawaiian cowboys). For many years, Hawaiians have farmed the rich, volcanic soil of the Upcountry fields. Geographically speaking, Upcountry Maui is much of the area on the Haleakala side of Maui, away from the shoreline. Upcountry is mostly rural, agricultural and residential. Beyond upcountry, you can reach Maui's highest peak at the Haleakala National Park. The largest towns Upcountry are Makawao, Pukalani, Kula and Haiku, although Upcountry has no precise boundaries. Our pristine surroundings give us access to clean air, pure water and exquisite agriculture. Allowing us to produce ultra-premium, Hawaiian spirits. History of Hali'imaile Distilling Company Located in Makawao, Maui, Hali'imaile Distilling Company is located on the slopes of Haleakala. It sits among the pineapple fields and sugar cane fields that have been harvested for over a century. If you go to the edge of the property, you get a gorgeous view of the coastal rim of the entire island. Hali'imaile Distilling Company is the culmination of a dream made reality from the LeVecke family. A family whose life in the spirits industry spans over half a century, and more specifically on the Hawaiian Islands for the last 30 years...Building brands like Hana Bay Rum and Whaler's Rum. 15 Years ago 2 brothers decided to start their own truly authentic micro-distillery on the island of Maui. Their goal was to create spirits that were truly one of a kind. Their journey found them scouring the country for a like-minded master distiller that could help bring this dream to reality. Mark Nigbur, a charismatic and gifted distiller in Colorado, was introduced to the brothers. Mark was making a name for himself in the industry for his unconventional distilling techniques and superior products. He had founded his own micro-distillery where he was distilling vodka from pharmaceutical grade glass stills that he engineered and designed himself. It wasn't long until the relationship was cemented and Mark brought his family to Maui to become Hali'imaile Distilling Company's Master Distiller. Today Mark works alongside his eldest son Cory who currently manages the day to day Distilling operations. So while this is a fairly new distillery and a brand new visitor center, this was a family dream in the making for the last 30 years. We are happy to welcome you to their vision. This was a great tour. Very informative. The guide was really knowledgeable about distilling and clearly had a passion for the craft. He was awesome! We appreciated the Q&A piece, and all of the spirits were excellent. The tasting room had a cool vibe and the decor was nice. Highly Recommend 👍👍 There’s also a glass studio/gallery across the parking lot that is worth checking out before or after the tour.

Still the best spirits distilled on the island. Take the tour to taste all of their products. Each person can only get three tastes of Vodka, Rum, Gin or Whisky. Ask about other special runs too. The Vodka is clean as it should be, the gin is full of botanicals like the old days and the rum will delight. I'm not big on whiskey, but my brother-in-law assures me it is great too. Amazing stills of the owners design and fairly large output for a small place. Look for their products at a liquor store near you too.

Toured this rather small “boutique” distillery and was disappointed Tour guide was gave very informative briefing on their process. However, she had to do the briefing outside of the distillery building because of the noise from the bottling process. We couldn’t relate the briefing to the equipment. Once inside conversation was impossible due to mask requirements and the noise. The tasting room process was different. Due to state law you only got 3 tastes for a total of 1oz. You also couldn’t share tastes between couples so I couldn’t taste all of the 5 selections they had. Recommend they not conduct tours during bottling. I do not recommend this tour.

We enjoyed out tour, but during COVID mask restrictions, the tour should have been limited to half our group’s size.
With the noise going on in the distillery and our guide (as well as all of us) wearing a mask, it was EXTREMELY difficult to her what she was saying. My wife and I could only pick up on about half of what was said. It didn’t help that in an effort to socially distance ourselves, we were in the back and not bunched up in the front of the group.
Perhaps a little mike/speaker that a guide could wear around their neck would solve the problem.

Maui is really turning into quite the destination for craft/specialty food aficionados. Stoping by Haliimaile Distilling was well worth the few dollars and time to learn about using pineapples to produce vodka, gin, whisky, and rum.
Very enjoyable tour and tasting. This will be a brand worth tracking down when I get back to California.

The tour was relatively short, but informative and interesting. Our guide was funny and knowledgable. The whole tour is basically just walking around the one warehouse that's the distillery, then into the second warehouse that has the tasting room. There were 5 liquors available to try, but each person only got 3 ~1/3-ounce pours (some kind of law, apparently). Between the two of us we could try a sip of everything though! The vodka was pretty smooth and fine but the gin, rum, and whiskey were all very flavorful and really good! The specialty POG vodka was super tasty and juicy. The bottles weren't too expensive and we bought the special locals-only POG vodka.

Probably the worst distillery/tasting tour we have ever been on and not worth the drive. Due to local laws you are not allowed to try more than 1/3 oz of 3 of their products. Fine, but don’t charge $12 for it. They also did not have their whiskey available to try but said we could buy it across the street. If you are interested in trying their products just go to a bar an order yourself.

I did not get to go on the tour. I arrived at 12:00 for a 1:00 tour. The woman at the front told me my tour time was at 11:00 and there would be no refund. I did not know that I made it for 11:00…which was my mistake. My issue was with the woman who handled the situation. She told me an email was sent to me verifying the time and that I had opened the email. She said, “My computer tells me everything and you did open your email verifying the time.” She was very rude and condescending when she was speaking to me and my wife. We later found the email in my spam folder. Hence, I never opened the email verifying the time because I didn’t know it went to my spam folder. I tried to call to verify the time before leaving for the 1 hour drive to the distillery but no one answered.

Unfortunately due to a GPS snafu, we were led to another distillery location, causing us to miss our tour time... totally our fault. That said (we would have arrived about 10 minutes late) we're not allowed to join the tour in progress and therefore not the tasting either, due to Hawaii legal restrictions. So while the booking experience was great and the staff friendly and helpful, I cannot comment on the tour, tasting, or quality of the product. To help future visitors, I want to make sure everyone is aware of 3 things. First, you definitely need to make your tour in time, you cannot join late. Second, you're legally required to participate in the tour to taste, by Hawaii law. Finally, be aware that there are no refunds. If you miss your prepaid reservation, you'll need to pay again if you want to come another time. They won't transfer your reservation to a new time for you. Hope this helps future visitors have a great experience. As for the taste and quality of the product, that will have to remain a mystery.

This was such a great concept and I was really looking forward to it, but it was a bit of a let down.

First, the first part of the tour was conducted with the participants sitting at picnic tables. In the blazing sun. At one pm. With NO SHADE!! Why? Umbrellas or some sort of shade structure would be simple to provide.

The tour itself consisted of walking through one large building, listening to an explanation of the process, and walking out. On the day we were there, nothing was going on. And it was HOT ( one pm. Metal building)

Then we went to the tasting room where we tasted a small sample of each of their products. Even though I'm not much of a spirits drinker, I did think all were really good and I'll actually try to find the gin on the mainland.

Personally, I think a series of pictures of the distilling process in the tasting room would have been better than sitting in the sun then standing in the hot building. My suggestion would be to only offer tastings and, perhaps in the future, build a small auditorium and create a film showing the actual process.
