I wanted to learn how to make croissants better than the ones I had attempted in the past, and she gave detailed advice and made the process so straightforward. She was great about helping us get good pictures. It was so nice to have an American teaching the class, as she shared her views as an expat in Paris. The class is not in a bakery, but in a large room that has all the equipment needed. There is a large counter that we all gathered around. I do think I benefited from the fact that part of the class were so late from the Paris Olympics security closures that we only had 3 people, so lots of personalized attention!
You will make croissants in a sort of reverse order. First you take the refrigerated dough and form your rolls, then while they are rising, you make the dough for the next day's class. Each person in the class made 2 croissants, 2 pain au chocolat and 1 pain au raisin and she gives you a bag to take these home. You are sent a link to the recipes. The behind the scenes tour was interesting (we were right there alongside the bakers in the kitchen), but the best part was getting to make our own French staple, baguettes. Our guide, Mourad, was encouraging as these two novices stretched and rolled croissants, beat dough and filled financier baking trays, and shaped dough for several baguettes. We walked out of the store with a huge bag of delicious treats that we had made ourselves! I definitely have been overcooking salmon. I learned how to enhance and compliment food without adding salt to draw out the water. Pictures and smiling faces support how well Fred took strangers and wove us into a petite family for a moment in time. We made baguettes and round loaves and some other French biscuit that was delicious. We learned how to work with dough and brown butter properly. And piping, which is filling up a bag with batter and squeezing it into the mold. Great fun and the items we baked came out perfect. You get to see the shop and check out some cheeses in the freezer and learn some things about regional cheeses. Then we made out own cheese and butter and both came out amazing and delicious. We ate our masterpieces along with a nice selection of cheese from the shop and some wine. Everything was so delicious and such a fun experience. I only wish I was staying in town longer to buy some cheese to enjoy, but I would definitely recommend the class. The people who ran the class were awesome, because I booked an early class, then couldn't get transportation there in time, so they added me to a later class in the day. I was so relieved! The class was great. The instructor was funny, charming and knowledgeable. We happened to all be American, and she spoke very good English. The macarons came out delicious and I can't wait to make them here at home in Indiana.
