We have two different aircraft models that we use for our variety of tours.
Our Hughes500 holds 4 guests and 1 pilot, and the Bell407 holds 6 guests and 1 pilot. We typically fly the Bell407 model on our tours departing from the Kona Base on the Big Island, and out of Four Seasons Ko Olina at Kalaeloa. The Hughes500 model is typically used for tours departing from our Hilo Base on the Big Island, as well as our base at Turtle Bay Resort, on the North Shore of Oahu.

There were four on our trip. I think there is room for five.
Ours had 6 passengers and the pilot. We were seated to equalize the weight in the helicopter. Two of the passengers sat facing backwards.
They must have several different configurations - we had a full flight with 6 passengers.
It depends on the flight. We went for the doors-off flight, ad the helicopter carried 4 passengers. My daughter and I were in the back (doors off). Two other passengers sat next to the pilot (doors on). The person in the middle seat was rather petite, and judging by what appeared to be rather tight quarters up front, that was probably a good thing.
I think 5 , if any of you get motion sickness this is not for you. My friend got very sick, it was a waste of $300 for her
We did the "Doors Off" flight. There were two plus the pilot in the front with one of the passengers in the middle and the two of us in the back. It depends on weight distribution but the back is the best
4 in the back and 1 in front plus the pilot. However, we could fit 1-2 more in the back. The pilot and staff do balance the weight of the helicopter before take off to ensure safety. So, don't bet on the exact seat.

We had four in the back and I was in the front. Two more passengers could have sat in the back for a total of 7 and the pilot in our model of helicopter.
Maximum is 4 and the pilot,2 passengers and the pilot in the front and 2 in the back.
