Our room at Hotel Burg Colmberg had a very nicely appointed modern feel and it did have a hair dryer. That was a good thing for us since my wife needed it and we did not have one that would work in Europe.

Hi.. The castle is a family run business. There isn't s bar as such, just a restaurant in the courtyard. It's a fantastic setting tho. I get the feeling that they would stay open until you had finished. They certainly did for us, which was around 10pm. People were having drinks there in the afternoon from about 4pm tho - possibly earlier as that was when we arrived. Hope that helps.
