We arranged with the hotel beforehand when we were booking the hotel. We paid extra but someone was there to meet us. I am pleased we did because there was a carnival so it would have taken a while to get a taxi.

You got further than I did. I asked the Coral Strand multiple times to help me coordinate airport transportation (either shuttle or taxi) and never got a response. :( This seems to have set the standard for the kind of service they provided for the entire stay (i.e. lousy).
Thankfully, the taxi drivers there are all very good. (I wouldn't get into a cab without a meter, and make sure they turn it on, as the flat rate they give you is sometimes quite a bit higher.) If you like your cab driver, save their card and have them pick you up for your return.

The place is more like a village - very laid back. You do not need a car for the evenings. There are a few restaurant options - place for drinks - hotel bars and restaurants. The hotel has some music in the evenings - nothing special. You can walk along the beach and get to other hotels bars and restaurants. It is very safe. There are no real shops -- one place that sells bathing suits and the beach stuff, a couple of supermarkets/convenience shops. Mahe centre is about 20-30 minutes by car on a very windy road - not to be done in the evening for the faint of heart. Mahe has has some restaurants and some bars/dancing. The rest of the island is pretty quiet. Mahe is really about beach - and beach restaurants and not so much about nightlife. Hope that helps.
