The restaurant at Ynyshir holds 5 AA rosettes - the first and only ever in Wales and has held 1 michelin star since 2014. Chef Patron Gareth Ward serves alternative British tasting menus using the very best of Welsh and British produce. Ynyshir showcases the best of Welsh ingredients following the seasons, such as Welsh Wagyu Beef and Anglesey Onions, locally foraged sea herbs from the estuary and greens from the woodland floor and gardens. During hunting season expect to see wild deer and local duck, grouse and partridge, and in summer Welsh Lamb. Gareth and his team pickle, salt, ferment and preserve fruits, leaves and berries carrying the harvests through the winter and into the spring. Ynyshir is a restaurant experience, finishing with a bed for the evening and breakfast the next morning!

Ynyshir inspires a particular kind of fandom. We visited over a month ago and several friends have already told us to stop banging on about it. But how can you not? What stands out most is the personality of the place. Everything is delicious, everything is very pretty—a great many restaurants achieve these things—but Ynyshir has something much more elusive: genuine character. The young chefs live there and care as deeply for the food and atmosphere as Gareth. They come across as believing they’re part of something important, which they are. Without exception, the staff are approachable, knowledgeable and palpably excited to be there. We’d like to shout out Charlie and Rory in particular as informative and charming. We’ve been twice, about a year apart, and were delighted by the changes. We loved it last time, but it seemed to have improved in every department. Even the classic dishes—like the katsu chicken and char sui pork—had evolved and become elevated. Everything seems alive and there’s no sense at all of a restaurant with a settled menu. One course we were told was new to the menu that week and stood happily alongside established classics. They have the confidence and, with 32 courses on our night, they have the space to play around and change things on the fly. There were plenty if surprises but I wouldn’t want to spoil them. We’ll be back.

Amazing, from start to finish. The food blew our minds, the flavours were just so good and the service was faultless. It was 32 courses but every one was a max 2 bites. We’ve been to quite a few Michelin star restaurants and this was by far the best. Gareth Ward is a genius - so many courses where we said “Wow!” or “Oh my god!”; at one point my wife said “This is just witchcraft!” There is a DJ playing great music throughout which is just loud enough so that you can talk without anyone else hearing your conversation. The atmosphere is chilled and the staff are all lovely, helpful and humble. Gareth was in the kitchen throughout working his magic. We stayed over in a Garden Room, which was huge and beautifully appointed. Breakfast in the morning was delicious and again the service was great. Just fabulous

Hard to imagine Ynyshir could live up to the very high expectations I had but..it did and then some. Every aspect of the experience is beyond cool..its pure understated brilliance. The place itself is majestic. Genius stroke to paint the restaurant black and the cool theme continues with the tipi bar and relaxed dining room. The room we stayed in was great..not over fussy but actually quite luxurious in its own way. The staff are so engaged and passionate its obvious how much they love their work. Gareth leads a very merry band who enjoy the tunes as much as the guests do. This breaks down all the usual expectstions of michelin starred dining - but the real star is the food. 30 incredible courses. Sounds like a lot but its managed beautifully and would be impossible to pick out a star dish. Also loving the bespoke cutlery and bowls from upcycled blacksmith... Cannot wait to visit again soon. Well done Ynyshir!

Truly mind blowing food experience from start to finish. Beautiful grounds and unique service. We stayed in a delightful tipi with private hot tub. Dinner service from 5-10.30pm with over 30 courses. Elegantly the best food we’ve ever enjoyed, boundaries were pushed combing best ingredients from around the world and here in Wales. Leave your pretentiousness and expectations at the gate, loved the “no dress code” policy, we were comfortable and had soo much fun! Gareth and the team executed every dish with utter precision, service was impeccable paired with great drinks, music and atmosphere. Any “foodie” worth their salt would recognise this for what it is, we sat at the 2-person pass bench in the heart of the kitchen, watching eagerly as the team delivered a service like the finest rock ballet. There’s restaurants and food that we have been lucky enough to visit and experience around the world at all levels from banging street food to 3 Michelin stars and this blew all of them out of the water. We didn’t take any pictures of the food because we would t want to soil anyone else’s experience (and we were too busy having way too much fun!) The ONLY establishment I’ve eaten that I would return in a heartbeat, can’t control my excitement at the prospect of the next visit. We loved every moment of this - whole team were amazing, from the off . Room in the main house was lovely - we faced a very green wall so no curtains drawn and windows wide open . The experience is just that - very different from all the other excellent gastro experiences we have had . We loved the banging tunes , we loved the multi tasking of the whole brigade , we loved how happy and relaxed they all looked , we loved the very well put together and reasonably priced wine list , we loved the quirky crockery and hand forged cutlery . And then there was the food - extraordinary - brave - confident and very accomplished . We have tried to identify our favourites - impossible ! The tomato poppadom ? The lobster ? The scampi ? The lamb rib ? Had to be the scallop - absolutely delicious. As for the scrambled egg the morning after - almost as good as my m in laws - I’ll have to get her some wagyu dripping .
