I needed a hotel room with a bathroom in the centre of Liverpool for a night out. The hotel did that job - so I have no qualms about saying you'll get what you need if that is all you need.

For a city centre hotel, with decent bedroom and en-suite it get's 5 stars for value. The room I had was, a family room, (even though booked a double), reasonably furnished, bed ok, kettle with tea and coffee, ironing board, TV - all functionable.

I really don't think there will be an issue. I can appreciate what others are saying about feeling claustrophobic but chances are you won't miss a window at that time of year. The hotel is quirky so what is more likely in my opinion is that the layout itself could be off putting - depends on the physicality of your mother and yourself.
On the positive side, it is a good location and rooms are modern and clean. I would give it a go - I think you will be pleasantly surprised.
