Keeping money in your luggage is not very smart and no hotel can guarantee you that it is safe. However, they will all hold your money at the front desk if you ask and you can get it when you pick up/drop off your key. I owned an inn and I can tell you that no innkeeper or hotelier can control what happens if you leave valuables in your room. You might have lost it somewhere else. They have no way of knowing if it was when you arrived at the hotel or when you left the airport.
