You have the same questions that I did when I wanted to visit Fez. First, regarding Casablanca, I really wanted to see it. I walked to the train station in Fez and got a ticket. The first class cabin seat was about €35 round trip, with stops in Meknes and Rabat before arriving in Casablanca. I hired a cab and saw the city. I felt comfortable doing it.
When I got the train back to Fez, I arrived late. The cab situation wasn't great. The cabbie loaded a bunch of people into it whom I didn't know. We drove away from the area of my hotel. I didn't like this at all. Do have a cellular link established for this country as you travel.
I didn't want to walk the streets at night, but the day is great. The Medina is too far away to walk, especially on streets that are complex. The Medina is something you want to see. I had a guide arranged by personnel from the hotel. It was about €35 for the afternoon and inclusive of tip. I strongly recommend this. The Medina is cool, but it is a real maze.
Have fun in both of these cities. Morocco is an amazing place. I'm very glad to have experienced it!
