All the hotels basically offer the same tour packages I would look here on TripAdvisor for the one you want and email the hotel with your preferences.

If you mean into Tonsai Bay it’s about 40 mins walk or 10 mins in a long tail boat which will s much easier and about 150 baht each and definitely the only way to return late at night.
