There was no water at all when we were there it was all land based safaris. There was still plenty of game to see.

We are travelling to Xudum at the beginning of November, so it will be hot. Is there air conditioning anywhere on site? Cabins? Dining room? If not, are there at least fans?

Yes, there is air condition in your lodge, so you will have it nice and cool at night. But no air con at the main lodge as it is open but this is ok as you will be on the game drive most of the time anyway.
