I assume you mean interconnecting rooms, useful for families. Yes they do. You should email the resort in good time and ask, as I don't think there a many of them. Obviously the vast majority of rooms are adjoining, if you just mean next door to each other.
We have had interconnecting rooms a couple of times and the concierges kindly offered to programme the keys so that they worked for both rooms. This was very useful.

If you have a US credit card with no foreign transaction fee, the best way to go will be charge it in pesos. Practice showed that $400 charge on my CC converted by merchant into pesos appeared on the account as $391 and change.
Of course need to make sure that the merchant uses normal conversion rate.
Otherwise USD would be the payment of choice.
