Chassity, first of all I can't answer for the policy at Infinity Bay regarding how long you can stay there, but I think you are biting off more than you can chew from a timing perspective. First thing you must confirm for your own piece of mind is what time you MUST be back at your cruise ship. The roads on Roatan are winding and difficult in spots. You really don't want to take chances with your schedule because a road delay can be fatal. Do not think in terms of distance - think in terms of time. If you really want to go to the chocolate factory, the rum factory and West Bay, I doubt that you will have time to do 5.5 hours at Infinity Bay as well. I expect you will be met at the boat by a shuttle bus that will take your group to Infinity Bay. This will take a half hour more or less. Once you get to Infinity bay you can hire a cab at the resort to take you to the other places you want to go. Usually you can negotiate the cab fares, and the drivers will wait for you. I would arrange to have a driver WAIT rather than RETURN for you, given that you have to be back at your ship. If that is your plan, make sure to tell your shuttle driver in advance so that the tour operator isn't running around looking for you at departure time. Also, make ABSOLUTELY SURE your cab driver understands your drop-dead schedule. By the way, when you mention shopping in West Bay, do you mean West End? They are different places. West Bay is where Infinity Bay resort is. It doesn't really have much shopping to offer. West END has a lot of tourist shops although personally I wouldn't waste my time going there - but that's your call. Do some research on-line and make your decision, I guess. But as I said, I really don't see getting all this packed in to one day. And the rushing about will completely negate the value of a 2-hour spa visit!
