This visit was not as successful as the previous ones. There was an excellent dish (Sicilian prawns tartare, served with a nice herb ice cream), a good one (frittura, fried seafood), an average one (a not so well cooked risotto with scallops and ceps that this time, unlike the previous one, were bland).
The worst dish of the night was a John Dory, completely dried out (maybe it had been kept under the lamp too long) and served with gooey fish skins: whether this was a failed attempt at "crispifying" them or an intended texture, the result was unpleasant.
Often restaurant owners and managers complain. that customers write criticisms here on TA whereas we should give them direct feedback. Well, my experience is that when I do so, I either get an angry response or no response. This time it was no response :-)
Service was personally sweet by a nice young waiter, but the kitchen was quite slow, there were longish waits between dishes, and staff was clearly overworked and hence not too attentive. I think in full summer the restaurant cannot cope with serving both hotel guest, with a "grill night' going on, and outside guests in search of gourmet cuisine (as they describe themselves).
All in all, this experience was average but in light of the moderate prices and of the previous good experiences I'm giving "on trust" a score of four...

We went back with trepidation, hoping the the return to form shown last February would continue after a previous disappointment. I'm happy to report that currently, in my opinion, this remains the best overall fine dining gastronomic option in the area.
The chef is from the South, he has a page on the menu explaining why he serves seafood in the middle of the Alps, and I think his dishes really show his understanding and liking of this produce. The way he transformed a humble mackerel into a delicious and elegant dish, featuring escarole, beetroot and Jerusalem artichoke and presented in a way that you don't expect, is exemplary. The other main, a classic here, was a seafood and vegetable frittura, perfectly executed and equally delicious.
Starters were an intensely tasting thistle (cardo) with high quality hazelnuts, and superb spaghetti with Cantabrian anchovies and candied lemon.
Desserts, prepared by a dedicated person, were appealing. We only had space for a (revisited) babà , which showed a lot of thought behind it and hit all the right notes.
I really like the cuisine of this chef. His dishes are nicely presented, inventive, and fulll of flavour. Service is young, friendly and professional, although a little under pressure. I should say it's an unusual and difficult room for a gorumet restaurant - it's part of a hotel and it sometimes attracts, as noted in other reviews, large and rather noisy groups, which undoubtedly detracts from the atmosphere. On the other hand prices are very reasonable for the quality: I guess one cannot have everything.

After a not so enthusing return visit 16 months ago, we are very happy to have tried la Pajara again. Encouraged by an excellent lunch on the first day of our weekend in the area, we went back for dinner the following day, and it was again very good.
Standout dishes over the two meals were a mixed fried seafood, just perfectly executed, and a pork belly featuring exemplary crunch on the outside and melting inside, with an intense jus. But also a "chicken lollipop", a spaghetti "alla chitarra" (the square ones) with baby octopus, almond sauce and crunchy pistachio, and a dessert of grappa baba' with lemon cream and zabaione were very impressive. Importantly, nothing was below par.
The young waiters have grown up bit :-) , and they can only be admired for the hard work they do, dealing with two dining rooms! Prices are very fair in view of the quality.

Again a good visit. In particular, the dish that is always on the menu and we always have, the seafood and vegetable frittura of prawns, was spectacular as ever. I also very much liked a prawn tartare served with an ice-cream and a perfectly grilled octopus. A pasta first course featured a very generous serving of clams and delicate flavours.
Unusually for a self-declared "gourmet" venue there was no amuse bouche and the bread offering has been pared down (but is still good). The hotel restaurant feel and the lack of a managerial presence in the room, with much of the responsibility left to hard-working but very young and too few waiters, detracts a bit from the experience that the food produced by the talented chef would deserve.
Prices for food and wine are most reasonable.

We expected a nice meal and got better than that. Excellent cuisine, some very very nice dishes, cosy and classy setting, professional service and all this for an amazingly reasonable, not to say low, price!! Wonderful. A true gem hidden in a hotel somewhat out of the main way but nevertheless close to center of town.

I confirm all the positive impressions from my recent visit and review, and this time I'm giving a 5 to average 4.5, which is a fairer score.
The savoury dishes were simply spectacular, both elegant and flavoursome: from an exemplary risotto with the most tasty porcini (ceps) and Mediterranean scallops; to cappellacci pasta filled with greens and Trentingrana, coming with lovely langoustines and tomato sauce; to a main of chunky and tender octopus; to another main of luscious king prawns wrapped in lardo di Colonnata. The dessert section continues in my opinion not to be at the same stratospheric level as the savoury dishes, but it is certainly not bad!
Prices are still very reasonable and the young waiters are still very pleasant. By now a must if I'm in Primiero.

The menu is creative and enticing, and the bread basket appealing. We were initially hesitant in choosing seafood in this restaurant at the foot of the mountains, but the results went beyond our expectations.
A seafood and vegetable 'frittura' was very tasty, well fried, with the freshness of the produce in evidence, as in all other dishes. Like for example 'cappellacci' filled with vegetables, coming with lovely langoustines and a brilliant tomato sauce made with very sweet tomatoes. And a grilled octopus was also spectacular.
Slight weakness in the desserts. Macarons "sandwiches" with white chocolate were nicely presented and pleasant, but the chefs perhaps have not yet mastered the art of macaron making (they felt more like a crispy meringue, lacking the typical 'gooeyness' in the middle).
Service by young waiters was professional and friendly. The room in modern mountain style is elegant and pleasant, and in the Summer you can also dine outside. Prices are very reasonable for the quality.

A Michelin star restaurant in 2017! We were seated right at the time of our reservation. We received a delicious complimentary appetizers from the chef, along with our three course meal. The food was absolutely delicious, and rivaled only by the excellent service we received! The hotel has a well-equipped play area for the children that we took full advantage of after the children had finished their meals - the kids menu was also quite fun! A lovely experience in every way!!

Last night I had a wonderful meal here, one of the best I've had in Italy. I had the daily menu for 23 Euros and a glass of local Alto Adige wine for an extra 3 Euros. The meal began with a rather disappointing salad with rubbery squid. Next was a fritto misto that was outstanding in every way. The meal finished with a theatrical dessert, a hollow chocolate ball filled with fresh fruit and tiny cookies presented on a huge round mirror. The waiter dropped the chocolate ball from about 6 inches and the fruit spilled out on to the mirror that had been dribbled with fruit sauces. If the squid in the salad had been tender, I would have given the restaurant five stars. The service was perfect, as was the view (I was outside).

maybe the chef has changed, but i found the food to be 'eh'. service was impeccible and prices were a bargain (as is everything in transacqua/fiero del primero). the ambiance was excellent also. i think mostly people staying there eat there. hotel looked nice too.

We were delighted to find this amazing restaurant attached to our hotel in Fiera di Primiero, Italy on recent bike tour of the Dolomites. This was by far the best meal we had in Italy and the prices were very reasonable. We were truly blown away at everything that came out of the kitchen. The staff was exceptional and the setting was stunning. The attention to detail made it clear that these folks love what they do and have a passion for food and creating a memorable experience!

During a short holiday in San Martino di Castrozza we stopped by Primiero and went to Payara for lunch. Definitely a happy experience. The staff is attentive and friendly, the location is welcoming and informal. The dishes offered denote attention to the traditional cuisine of the area but also interesting research and innovation. We will definitely be back!

Second opportunity to satisfy the senses and the desire for pleasure in this place that I wholeheartedly recommend.
Impeccable and friendly welcome with a hint of confidence necessary to feel at ease.
A refined menu where you can see and feel the Chef's experience, accompanied by a "legendary" quality of the raw materials. "Sea and mountain" menu with an original, simple but tasty opening: olive oil from Salento and a butter foam with a hint of beetroot. The "aperitif" bubbles are also effective: Balter and Altemasi, two classics. The wine list is not "encyclopedic" but rather essential: a cellar that offers everything that can best accompany the refinement and taste of the dishes. The dessert options are also excellent and original. Welcoming environment with absolutely attention to detail: sober, elegant, quiet. The table service is professional with the supervision of Davide and the impeccable contribution of Giuditta.

Very good location and accessible parking.
Quiet and refined place, top dining room staff.
The maître who welcomed us should be an "example" for all those "snobbish" places that continue to save themselves only because of their lucky position. A true master who will be able to advise you, especially if you are not an expert in the area.
