The restaurant is an attractive white building on the corner of a narrow, busy San Juan street. The neighborhood feels like a movie set and teems with locals and tourists. You enter and pass by the attractive bar. The large room is subdivided into three rectangles and is a well lit and energetic with great music; masterful servers who orchestrate food delivery flawlessly. The menus a 5 course presentation for $145. We enjoyed Sushi fluke; tiny white bean soup (breathtaking) lobster risotto (superb); sea bass on bamboo rice, (excellent and tasty, but not particularly exciting); and the world class desserts: the Choco L8 (8 different forms of chocolate presented as a small custard tart with the eighth a chocolate Godiva sauce poured on) and the blueberry bacon tart, (both desserts are world class). Cocktails are amazing, especially their smoked old fashioned, a spicy margarita cleverly named “global warming”, and a nice rum citrus drink called the “ Bob Marley”. I love great latte, and they serve one.

Marmalade is an upscale tasting menu place in old SAN Juan. The room is modern design with muted subtle colours and comfortable seating. Nice bar along one side. The tasting menu has five courses, including the house’s soup, and diners can choose from a selection for each course. Dishes range from seafood, meat or veggie, and each one we had was creative and delicious. Servings are small as is usual for tasting menus. Service is enthusiastic and knowledgeable. Small but very good wine list as well and the.bar will prepare a mocktail if requested. I thought it was a bit pricey at $169 per person but then Marmalade is in a tourist location and it is very popular. Reservations are necessary.

This restaurant is Michelin star-level quality. The food was innovative and excellent. The goat and pistachio special was the best preparation I have ever had of goat--and I have been to Africa where it is served par excellence. The 8 chocolate torta was phenomenal. White Bean soup was delicious. Thanks for the recipe! Outstanding wine list--has been on Wine Spectator's Best of List since 2008. The best part was the exceptional service. You do not see staff who have this level of training since COVID. It's hard to be personal, warm, and professional--but our server was all 3. The host was charming and engaging. The restaurant was comfortable, with good lighting, and not too noisy. The crowd was hip and diverse--fun to watch. We don't dine out like this much anymore because we don't find the quality of food and service--it's generally not worth the money. This experience was priceless and exceptional. We'll remember it for a long time. Thanks Marmelade!

Marmalade is by far my favorite restaurant my wife and I have dined in for the last ten plus years. The staff, along with the dining experience is the reason we travel from Florida to San Juan for a weekend. I cannot over emphasize how fantastic Marmalade is. Yes it is a bit pricey but absolutely worth the experience. Definitely suggest the five course with wine pairing. I appreciated Jesus, “Chu”, bartender coming to our table to educate me on the special ice formula in my favorite cocktail from here, Global Warming. It may sound crazy, but I believe once you have dined here, flying to PR to have dinner, primarily the bean soup (OMG!) second course, you will not think I’m nuts. Peter, you and your staff are the best!

Incredible service, wonderful ambience, and excellent food. We had the pre-set five course meal and wine pairings. Our server (Paul) was also a sommelier and very knowledgeable about the menu and the wines. This is not a spot to go on a budget (~$500 for a two-person meal), so be sure you understand that going in. Our only nit with the experience was that it was too much food. The pre-set menu is two appetizers, an intermediate dish, an entree, and a dessert, so there were ten dishes plus drinks between the two of us. By the time entrees came out, we were already full and could only nibble on that and dessert. Each dish was incredible, but we would have enjoyed it more with smaller portions. Overall, certainly the finest meal we had in Puerto Rico and compares with excellent meals we have had in major cities throughout the US.

The ambiance, knowledgeable service by Melanie, Raphael keeping a watchful eye on his dining room, and the creative dishes executed by Chef Schintlers staff made for a memorable experience! The selection of glassware, silverware, and dishes that are used to present menu items is second to none. For one exception, though. Please, Chef, provide your guests with cotton napkins. The small polyester napkin does not do your restaurant justice! All dishes were served either hot or cold depending on preparation. Plates were either chilled or warmed for presentation. I would suggest taking a picture of the menu so that when courses are served, you can refer to review ingredients. When servers presented each course, it would be hard to hear / understand the description. If you find yourself in San Juan and seek a memorable dining experience, Marmalade is a must!

Over priced for the food that was served. Popcorn shrimp was the highlight Soup had a good amount of black truffles, but was a little salty . Duck not impressed Halibut was dry and also salty The wine served , very disappointed Cheap chardonnay and nothing else to justify what was charged Desert was good Service was excellent Ambience ok Under my expectations

This is probably one of the best restaurants in San Juan and overall it was a great experience. All of the dishes we tried were delicious and the portions of each course were such that I was stuffed at the end. The wine pairing my partner got also was very well matched and interesting. I did find a sharp shard of bone in the lamb tagine that startled me when it stabbed the top of my mouth - I didn’t complain at the time, But I get the sense if I had said something they would have offered something to rectify it. They did give us a complimentary wine pour since my cocktail took a while to come out. There was a large group (wedding rehearsal or something?) across several tables that were very loud so it was a bit hard to hear our waitress explain the wine and courses but overall the servers are very attentive. Overall I think this was a great meal and worth it for the experience!

Came here celebrating a recent promotion. A family member made us the reservation, letting them know it was to celebrate. Every single person, from the hostess to each food runner, came by to congratulate us. Christina, our waitress, took the wheel in terms of drink pairings and laughed with us, she’s awesome. She made the experience so enjoyable, but the food made it the best meal we’ve ever had. Spoiled by each of the five courses, from ceviche to gnocchi to lamb, the kitchen put together the most unreal dishes we’ve ever had. The short rib gnocchi and tiny bean soup will be the most memorable dishes, and nothing will compare for quite some time I’m sure. We were left speechless, even at the table between our courses.

It is difficult to know where to begin, but let's start with the people who worked there - they were exceptionally well-trained and professional. They didn't intrude, but were there to ask how things were going and if we were happy. They knew the menu and the wines down to the tiniest detail. We live in California within an hour of about one hundred wineries and know when people are not well-trained about wine and are bluffing. This was not the case here. The wine variety and pairing was amazing. On to the food: For each course there were about six choices and every choice of every course was delicious beyond one's imagination. If the review sounds over-the-top, it is because that was how the food was. Peter, the owner/chef has an amazing background in food and wines and it shows. I mentioned to one of the people who came by our table that I had read online that someone said that they would come to San Juan just to eat at Marmalade and he said that some people book their dinner reservations before they book their plane ticket. That's my plan for the future. Book early for this exceptional dinner.

Our experience with Marmalade began at another restaurant. We were enjoying lunch at another restaurant, and a couple was seated at the table next to us. We began a brief conversation as traveling people often do. We were comparing restaurants, and they brought up that we need to try Marmalade. After we left, we made reservations for that evening. We arrived early for a reservation and were seated promptly. The restaurant serves a five course meal with optional wine pairing, which we did. My dining partner chose for his five courses, fluke sashimi, the white bean soup which is served with every selection, Malanga Gnocchi, grilled ahi tuna and for dessert he chose Chico-L8. I chose the red snapper ceviche, the white bean soup, the risotto of lobster, lamb tagine and for dessert blueberry bacon &bourbon (this was spectacular). The presentation of every course, along with its pairings were executed flawlessly. What a creative and exceptional meal. and much to our surprise the couple that we had met at lunch came back also for an evening meal. It is funny how paths cross. This is not an inexpensive restaurant. Our bill for the evening with one cocktail, two water services, two 5 course meals with pairings was $457 US And remember you’re in San Juan so there was $40 in taxes. This did not include tip. A shout out to our server. Isaac, which was also very helpful in our selections. It is hard to come by this type of dining experience. It was worth every penny, or I should say dollar in this case to us, what a memorable evening.

We dined here during our stay in Puerto Rico after speaking to other guests at our hotel. From the moment you walk into the restaurant you feel as though you are the only patrons. Our table was in a small nook with only two other tables. Our “Captain” was Alessandro and he knew every detail about the menu and wine served. We did the meal tasting and the wine pairing which I would absolutely recommend. You can choose each of our 4 courses (2nd course is their signature white bean soup with truffle) and the wine that accompanies each plate accentuates every bite! Jesus, the manager, came over multiple times to ensure we were satisfied with the meal/service and shared with us the extensive training each employee must undergo. Melanie was also our server and she was professional and passionate about her job. It was truly one of the BEST dining experiences I have ever had! Thank you Peter Schintler (Chef Owner) for your commitment to excellence and for creating a locally sourced menu and for your commitment to the environment.

I came here for Marmalade's 5-course Christmas dinner and had a relatively nice experience. Food: Overall, this 5-course meal was rather nice. Diver scallops "ramen," lobster risotto and beef tenderloin were spot on. Paella and B3 (B cubed) dessert, not so much. I think the executive chef had a good intention when he made this paella, but everything being compressed into a small circular cone shape takes away the complex flavoring of a paella. For the B3 dessert, it did not have the level of excitement I would expect from a $145 5-course meal (with drinks it ended up being $200 plus taxes & tips). When I opted to not have their tiny white bean soup, they brought me a small sample anyway: boy was I surprised! This is what Marmalade's executive chef is known for, and I appreciated that he allows you to take a copy of his recipe card. Service: Shay and her colleagues were quite attentive and provided amazing service.

This restaurant is one of the best I have been to anywhere in the world. The flavor pairings were unmatched, the service staff the most professional, knowledgeable yet down to earth and made us feel "at home". The ambiance was relaxing, pleasing and perfect to enjoy the amazing culinary experience. Highly recommend taking a quick trip to Old El San Juan, PR, USA even if just to dine at Marmalade alone!

WOW, this dining experience did not disappoint! More of a fixed price menu than a tasting menu, as you got the option to select a starter, appetizer, entree and dessert of your choice, and they also provided a second appetizer of a white bean truffle soup. Wine pairings were offered. We found their wine list to be excellent and selected a bottle of Gigondas plus a glass of Sauvignon Blanc to start. The food was excellent from start to finish with a beautiful presentation for each dish. Servers were attentive and polished. We enjoyed our experience tremendously and would return to San Juan just to eat here! Definitely worth a visit if you’ve got time in Old San Juan.
