We’ve eaten here several times and always enjoyed the experience. We recently made reservations for our Birthdays. When I reserved the table Idid mention it was a special occasion and for a table by the window,preferably quiet. We were seated away from the window near...a large table with loud children. The food was average,the steak slightly tough ( steak/frites). No mention was made to us of our ‘special occasion’ Hoping for an exceptional experience,it was sadly far from it.More

Based on the menu and prices, I made a mistake thinking that this would be a nicer restaurant dinner experience and booked a table for my birthday. Despite having made a reservation a week previously and telling them it was a special occasion, we were...seated in the middle of the restaurant while families with young children got all the good window seatings. The music was a loud mix of annoying fast music that seemed designed to speed diners through as quickly as possible. We had a $30 burger, beer and a $67 prime rib that were adequate, but not “good”. We ordered, ate and left in well under in an hour. Disappointing way to spend our time and money.More

While staying at the Fairmont, which we do approximately 5-8 times a year, we dined here for a wedding we were attending. Normally wedding food at the Fairmont is sub-par at best, but being forced to order off the menu at the Vermillion Room was...an unfortunate experience I do not want to have again. My wife and I ordered the french onion soup, escargot, the burger and risotto. The french onion soup was sweet yet bland, a strange combination I didn't even know existed. The escargot was overcooked and dry. The burger was two patties of overcooked, dry A-minus alberta beef, sandwiched between leftover shortrib, mushrooms, and three pieces of arugula. But by far the worst dish I have ever had in my life was their "risotto" - if you could even call it that. It was more like a breakfast porridge you'd find in a run-down old folks home. There was no aborio rice to be found in the dish, just mushed-up buckwheat (why?), which has no place being called risotto. I'd like to understand how a dish of this nature gets past the first round of testing to make it onto a menu in this "5-star hotel". What. The. F*ck.? After spending millions of dollars on a beautiful renovation to this room, you'd think the hotel would hire a chef who could put together a half-decent menu. Don't waste your time in this restaurant, unless you just want cocktails, which were pretty good. Kudos. Head to the rundle lounge instead, their sushi, dumplings and bao buns are just a few items off their menu that are a delicious treat, and a wonderful departure from the boring, bland menu of the Vermillion Room.More

We enjoyed a trip to Banff on the weekend and treated ourselves to a taste of Banff and all the Springs has to offer. We choose the Vermilion Room foe our dinner. We got there early and were offered a nice window seat. The wait...staff were wonderful and answered any questions. I debated between the short ribs or the half chicken. Should have gone for the chicken. The short rib was very short - maybe 3 oz. it was tender and well cooked. The chicken arrived at the table next to us and it was a beauty and filled the plate. Guess I will know for next time. So needless to say I was disappointed with the meat to $ ratio. We decided to have dessert since we both still had room in our stomachs. The banana cream pie was a piece of art. However, I really felt it was more than 50% cream with a little green banana tucked it. I just have high expectations when food costs a bunch. It is all about value.More

We had a wonderful breakfast this morning at the Vermillion Dining Room. Our server was Molly. She was efficient and knowledgeable. She was always attentive to us and ensured all our needs were met. My wife enjoyed the “Cold Smoked Nova Scotia Salmon Tartine” and...I loved the buttermilk pancakes with Chantilly cream & Blueberry Compote with a side of applewood smoked bacon! As our last meal for the weekend, it was perfect. Thanks to all the staff at the restaurant for making our meal memorable and delicious!More

I wanted to like this restaurant because of the interior design but the food was well below average, as was the service. We came for Thanksgiving and our entire group ordered the Thanksgiving meal. It took 1hr and 45 min from the time we were...seated for our food to arrive. Huh? For a set menu? That seems absurd. During much of that time our server seemed to forget we were there. Food was not great, but again only ordered the Thanksgiving menu and a charcuterie board so don't know the whole menu. For $65 each, felt like the Thanksgiving menu should have stunned. It didn't.More

Ate breakfast in the Vermillion room all three days we stayed in the Banff Springs Hotel. It isn’t inexpensive but excellent qualityStaff was friendly and efficient. Also split a delicious giant burger and fries along with a wonderful key lime tart one night!

Less than Expected. Slow and in attentive service. Brunch is now very limited selection. And to top it off, found a piece of plastic wrapping in my scrambled eggs after I had put into my mouth 🤮🤢. That ended my brunch immediately. Brought to our...servers attention, after I finally got her attention. Waited then until manager could come to table. He did the right thing, apologized and offered other food but I was definitely not hungry then but rather nauseated. He waived bill and we left. Not sure I will ever go back.More

We had the best experience and most enjoyable experience at Vermilion room with Ellen She was the best server, with personable service and very good personal experience. She has engaging manner and very pleasant personality.
