I would definitely dine here again. We were greeted with the best table in the house, a little two seater overlooking lake Louise. At first we were disappointed with the cost of the wine list, however, once we had a look at the food menu this small detail was soon forgotten. We ordered an appetizer, entree and dessert each. All three meals were divine and the service was outstanding. The venison tartare was sensational with all the flavours working well together. The goulash entree was so tender it melted in your mouth. Adding the bone marrow only made this dish more appealing. The crab ravioli was great, however, just short of al dente. This did not take away from the wonderful flavours the crab, fish and sauces delivered together.
We finished with the Chocolate fondue and were again impressed with what was presented. The only complaint I have about this dish was the apple, it didn’t go with all the other elements on the plate.

There are many things about the restaurant that deserve praise.
1. The ambiance was perfect, the wood trimmings all around the room, massive clock and a wine rack that would make anyone envious.
2. The service was outstanding, and if you watched carefully it was an integrated approach amongst all the staff present. When one staff member was headed to the back, if he/she saw a table with empty dishes or needed wine topped up they stepped in (even when it was not their own table).
3. The meal was to die for... we chose the traditional fondue for two... absolutely enough food for two (we had to strain to eat it all). The wine recommendation was spot on to go with the cheeze fondue.
4. The view out over the lake with the snow falling was picturesque.... an image that the camera cannot reproduce.
Definitely visit again

It is located within the Fairmont Chateau. We went for dinner and decided to take the Chateau experience, which is a three-course menu, including a Mushroom & Shallot Cheese Fondue, beef tenderloin for entrees, and a chocolate Fondue dessert (Toblerone). It was delicious and definitely enough for two as we were not able to finish the chocolate fondue. Yes it is a bit expensive but definitely a great experience. We were sitting in their room which looks like a library a bit, but if you can have a table close to the Lake views, that would be my recommendation to enjoy an amazing view.
They do respect all social distance rules and measures to make the experience as smooth as possible.
I would recommend booking in advance with the current pandemic as it is the best way to ensure you can have a table.

Disappointed as we chose this restaurant to celebrate our 30th wedding anniversary- advised the hostess, had the Fairmont concierge book our reservation for us weeks in advance- the table was ok. Our server Erica wooed us throughout the ordering and meal, but did not reappear for dessert or the bill presentation. Sadly, there was no acknowledgement of this milestone for us, despite previous posts for others. The cheese and chocolate fondues were amazing. The schnitzel was overcooked and bland, to be truthful. For $300 for 2 people- I would say disappointing overall.

Shockingly BAD! And Ive been a loyal Platinum member of The Fairmont for years. I know the hotel laid off most of their staff during the pandemic, but there is absolutely no excuse for awful, overpriced “Fondue Experience” we experienced. If you want a real fondue experience, and excellent service, take the Glacier Express chair at Lake Louise ski resort to the Whitehorn Bistro and enjoy a real fondue for half the price!
We reserved with the Wallister Stube two weeks in advance. We had guests in from Vancouver and Toronto and after a day of skiing, had reserved our table for 7:30 pm.
We arrived promptly, only to be scolded by the host (with our out of town guests standing right there) telling us that our reservation had been for 6 pm, that we were a “no show” and that they had no contact information for us. (Again, I’ve been a Fairmont Platinum member for years, and had provided both my cell and email at the time we made the reservation. One would have expected the Fairmont to have linked my reservation to my account immediately upon my making the reservation two weeks earlier.)
With dramatic flair, he then proceeded to lament that they were between seating and would only possibly maybe be able to accommodate us. He returned to inform us that he graciously found us a table “but it was in the corner”.
Foolishly, we decided to stay.
We then ordered the Fondue Experience - at $85 per couple.
What arrived was two fondue pots full of white cheese sauce - not actual cheese, a small bowl of bread cubes, and a side plate of raw vegetables.
Again - it was awful. We paid $498 for horrible meal and the “pleasure” of being reprimanded by the host.
Two days later, while skiing at Lake Louise, we stopped in for lunch at the Whitehorn Bistro. For $55, we ordered fondue. The Gruyère and kirsch gooey pot of perfect cheese came with a platter of charcuterie, perfectly precooked fresh vegetables, and fruit and chocolate. It was excellent.
Don’t waste your money on the Chateau Lake Louise. I will be letting my Platinum membership with Fairmont and Accor expire.

We were delightfully surprise with both the food and the services, Erika and Parker were excellent in their service, especially Parker which brought both our Entrees and Dessert. He was genuinely concern about my wife's allergy to milk by products. Erika was very attentive to our needs and the meals were excellent. I had the Wiener Schnitzel and my wife had the Wiener Saftgulasch. Adjustment were made because of her allergy to milk. We were a little disappointed that we were not told that she would not be getting the bone marrow mousse. We had to ask for it so that I can have it. The ambiance was a little too dark for us. Otherwise, we will go back.

This was our second visit to the Walliser and will likely be our last. While the atmosphere is lovely, the food was just okay. The Onion Soup was pleasant but nothing remarkable and the Pork Schnitzel was downright plain, in addition to being highly overpriced at $49. The Pretzel Buns were the highlight of the meal, and they were perfection, but the main entree was lacklustre. Very disappointing for a restaurant of this caliber.

We had splurged for Valentine's Day and were staying at the hotel and loved the idea of eating at the hotel as well. We had a great table upstairs that was very private and overlooked the downstairs with a balcony. We were told it was the original section of the restaurant. They had 80s love songs playing and we loved that! We got the Chateau Experience, which was cheese fondue, steak, and then chocolate fondue for dessert. It was AMAZING! So much food though. We still managed to eat most of the delicious Toblerone dessert fondue and accompaniments though! The cheese fondue- my goodness, there was not a drop left. And the steak was done to perfection as were all of the sides. The most perfect meal.

My wife and I booked a reservation at this restaurant through our concierge at the Banff Springs Hotel. It was supposed to be a nice romantic dinner as we took the day to travel to Lake Louise from Banff. From the minute we stepped up to the restaurant the host came off as unwelcoming and when there was confusion around our reservation time he seemed annoyed at us. The restaurant accommodated us at the bar and we enjoyed our food as well as our wait staff. Very much inline with the Fairmont experience. As we went to leave we politely asked the host whether or not their might be a shuttle that runs restaurant patrons to the parking lot located off property. A question we only asked because the Banff Springs offered shuttles not only to and from their German Pub on property but to restaurants downtown complimentary. The host quickly said no and barely took the time to look at us. So over all, the food was good, the service below par due to our front of house experience.

Firstly, eventhough we advised we were celebrating our 35th wedding anniversary and arrived for our reservation around 5:00 p.m. we were not seated in the area with the view. We were told those tables needed to be reserved for parties of 4. BS. The beef fondue is not a good thing to order. Very little beef. 4 thin strips of sirloin and 4 thin strips of bison for 2 people. they give bread cubes and cheese cubes and some other veggies. cheese fondue appetizer was pretty good, but not the best i've had. we should have ordered a regular entre perhaps. of all the restaurants we went to over our 8 days in banff, lake louise, this was the most expensive and the worst experience overall.

Hotel policy is that unless you are a registered guest at the hotel you can’t reserve a table to dine. It makes sense considering there is not really anywhere else for people to dine, however as I was staying elsewhere I was only being offered a seat at the bar in each restaurant. Not really the fine dining experience I was looking for on my significant birthday. Our last ditch effort brought us to the Walliser Stube, where maître d Daniel went above and beyond by not only finding us a table but seating us at the best seat in the house overlooking the setting sun on the Lake Louise itself. Simply stunning. The Chateau Experience with cheese fondue, chateaubriand, and chocolate fondue was just that…and experience. After leaving the hotel, the amazing night sky that can only be seen so far from civilization was the piece de resistance.

This was an amazing experience! Nick was our server (first time lucky, second time lucky/request). The fondue is a must. If you like mushrooms, this is the one. The fondue experience is a great first go, but we basically tried the whole menu and were not disappointed on any of the selections.
Cocktails, wine descriptions, service timing...everything was pretty much perfect for our time here.
And if you are lucky enough as well to get Nick, well, expect professional service and a gentleman who will engage exactly as you wish.
My wife and I have been in this industry for 20+ years, and the kitchen preparation, the mixologist precision, and all of the staff made an amazing family experience.
We went twice. Arguably, both were up there with anything we've seen or experiences we would wish for our own guests.
Make this place an event for you and yours. It's awesome!! Enjoy! 😁

Emailed for reservation weeks in advance and requested window overlooking the lake as it was a special occassion. That didn't happen.
We chose the set 3 course menu with lobster and the wine paring, plus a glass of champagne to start. Total cost approx $400 (2 people).
The fondue was nothing special. One small lobster tail to share. The steak nice but the veggies served with it were so hard you couldn't cut them (?parsnip and carrot). The dessert was apple fritters but they were some over deep fried balls of something with no apple at all.
The server tried to remove plates whilst we were still eating on two occasions.
I didn't think this restaurant was anything special, and the food certainly did not warrant the price.
We ate at Louiza the next night and enjoyed a far better meal at more appropriate price.

I was at the Chateau Lake Louise for a conference where most meals were taken care of, but on the final night, I treated myself to the Walliser Stube with a friend who was also attending the conference.
We strolled in around 8:30pm without a reservation (it was late April on a Thursday), and were seated, not right at the window, but behind the table at the window. Neil Young's Harvest Moon was playing.
We figured it's not every day you're dining here, so we opted for the Walliser Stube Experience - a traditional cheese fondue with all the fixings (pretzel bun, French bread, gherkins, pickled onions, fresh veggies), the beef filet mignon with bordelaise sauce, asparagus, potato, and béarnaise sauce, and a dark chocolate fondue with cream puffs, shortbread, strawberries, and a homemade merengue marshmallow. It was so dreamy, we kept saying, "I am so happy!"
It is overpriced? Absolutely, but this is the Chateau Lake Louise. If money's an object, you don't come anywhere near Lake Louise, period.
Was service impeccable? Absolutely.
Was the food delicious? Yes.
Was the fillet mignon the best part of it. Yes.
Was the location and ambiance beautiful? Absolutely.
They let us enjoy our meal without a rush. The music was always good. The food was always good. A novelty? For sure but good.
This is not an every day restaurant for me, but a special occasion, "let's live it up" type place. My friend and I kept sitting back, sipping our Tuscan Cab Sauv, proclaiming, "I'm so happy right now. This is the best decision. I am so happy."
