It was nice to finally visit Vedder Sushi again, albeit in takeout form due to the ongoing COVID pandemic, after an absence of almost exactly 5 years. Between 2013 and 2015 I patronized this establishment quite regularly with the family and recall it being quite...tasty, so I was rather anxious to see what, if anything, had changed in the intervening half decade. To facilitate a proper comparison, I ordered many of the same items that used to be favourites in yesteryear: Tempura, Chicken Karaage, Feta Cheese Roll, and Magic Tuna Roll. I’d also ordered the prawn & scallop skewers; however, these were forgotten and I wasn’t charged for them so I won’t cry over spilled milk. Appetizer Tempura: One of the pitfalls of tempura at many sushi establishments is the greasy texture and oil they’re often soaked in. This, I find, ruins the flavour and practically eliminates any crunch the tempura batter may have. Thankfully, this is not the case with Vedder Sushi’s tempura. It is light and crisp and there’s no oily aftertaste. Even in takeout form, the tempura manages to maintain its integrity thanks to thoughtful “breathing holes” punctured in the takeout container. Magic Tuna Roll: This “appetizer” sushi roll is bright and colourful thanks to the confluence of sauces and vibrant side salad. Described as being a “deep fried roll with tuna, veg, avocado, [and] cucumber,” this sushi role highlights Vedder Sushi’s nod to traditionalism complemented with the modern. I appreciated the light sear on the tuna and felt it worked well with the fresher elements of the dish. In many respects, this item reminded me of Vedder’s fantastic “Alaska Roll,” which uses smoked salmon in a traditional California Roll. Spicy Chicken Karaage: This dish was a perennial favourite of mine and is perhaps the one I was most looking forward to eating again. In short, I wasn’t disappointed. The karaage had a light crispness to it – as any proper chicken karaage should – and the sauce it was slathered in gave it both an attractive deep red colour + nice “kick” of spice. The accompanying side salad with orange segments further added to the bright and invigorating colour of the dish. Feta Cheese Roll: This roll is one of Vedder’s “specialties” and is a literal piece de resistance. Featuring a beautiful mix of feta cheese, BBQ beef, yam, crabmeat and mystery special sauce, this roll epitomizes what innovation in a sushi restaurant can be in that it combines unconventional ingredients (beef and yam) with those elements of sushi that make it a form of art: symmetry, finite execution, bright & vibrant colours, and elevated flavours. Seriously, this roll shouldn’t really work on paper, but it is a true thing of beauty. FOOD: 4/5 SERVICE: 4/5 VALUE: 4/5 RECOMMENDATION: I’m glad that my Vedder Sushi experience lived up to pre-existing expectations. Everything ordered was on point and the rolls still highlighted that innovative edge Vedder Sushi is known for. If you’re in the Chilliwack area, I do recommend you consider giving this place a try!
