Apparently there are people who think brown rice makes for a healthier sushi experience, but there is a reason authentic restaurants don’t use it. It changes the texture of the sushi and interferes with the flavor and mouth feel of the fish and other ingredients....More

I have asked for gluten free soya sauce here and they have it. That, a hold on garlic and some good 'ole brown rice and I think you're set.
