About
With a luxurious and contemporary design inspired by the romance of travel in the 1930’s, Notch8 brings a new era of glamour to Fairmont Hotel Vancouver. Named after a train’s top speed, the restaurant pays homage to the hotel’s storied history and legacy as a luxury hotel along the Canadian Pacific railway. Chef Will Lew has modernized the essence of classic dishes from the archived menus of the hotel’s early days to appeal to today’s discerning palates. Behind the bar, vibrant cocktails made popular during pre and post prohibition times are being shaken up, and an extensive wine list with offerings from around the world has been curated with recommendations for best pairings. Atmosphere and service are much better than the quality of the lunch served today. Ambience great and the spacious, generous layout would allow for a very enjoyable lunch and meetings.Food however was way below par. Fish and chips: Batter very thick and mushy with little,...more mushy fish. Fries, lukewarm, limp, soggy. With a hip injury, today, I had to rely on Valet parking. 55 CAD, !! , making the experience a very expensive mistakeMore

Had booked afternoon tea and the overall experience felt rushed and not relaxed. Having had afternoon tea at many reputed establishments, including Fornum&Mason, London, UK, we had high expectations from the Fairmont. It did not turn out so. It was rushed and just not polished....Our server was not well informed of the teas, and the overall experience felt rushed - not relaxed and enjoyable. Given the price the customer experience needs to be more relaxed and pleasurable. I’ll be contacting the management to share my experience. At this time we are not inclined to go back there.More

It was a good choice where I met my friends, prices for three persons were reasonable. I liked there good with the Christmas ambiance.

We came to Notch 8 for their Christmas Tea. Reservations are required and sell out fast. We came for the 11am seating(they also have 1pm & 3pm). The tea room is decorated like a Swiss Chalet. Our server greeted us in the lobby and took...us back to the room. There is a set menu and also a variety of tea options. I love the Christmas blend tea. Once you decide on tea they bring out your 3 tiered plates with scones, sandwiches and desserts. it doesn’t look like it will be that filling but there was no way to finish all of it. We loved the cones with clotted cream and jam and the egg salad, ham and turkey sandwiches were delicious. There were about 5 different desserts and the peppermint macaron was our favorite. you can take your time and sit for 90 minutes. There were couples, families and girlfriends-something for everyone. Our server was so kind and amazing. Would highly recommend doing this.More

Beautifully decorated this restaurant is located in the Fairmont Hotel. Staff friendly and cocktail list was extensive. The menu had a range of selections but it was nothing to write home about. We almost left but stayed and had trout and steak.

Went to celebrate Thanksgiving with my wife and brother....Have dined there before so we expected a great dinner to share a special occasion. We had the fixed Thanksgiving menu. The soup to start was very unique and quite good. The turkey dinner however was lackluster...and not too great....It was very traditional without a twist one would expect from Notch 8. The turkey was not very good. It was sliced with tendon and cartilage and the white meat was somewhat dry and tough! Disappointing to say the least. The desert was boring and common. Pumpkin pie with ice cream. Neither were impressive. We hoped to impress my brother with a great Thanksgiving dinner but it was a letdown. The dining room however was beautiful as alwaysMore

It’s a 5* restaurant when it comes to service and ambiance. But the meal itself was nothing special. We had cauliflower steak and chicken schnitzel which were nothing special. The prime rib was good. The best part of the meal was the onion soup. So...if you are looking for a great meal, you may want to try another option. But the service and ambiance was very good.More

Our train from Jasper arrived late (8:00 p.m.) and we barely made it to the restaurant in time for our 8:30 reservation. My partner ordered the Ocean Harvest Risotto and was very disappointed; the risotto was "split", with the sauce separated. Also, the "crispy squid"...in the dish had been cooked hours before and was hard and almost cold. I ordered the Pan Roasted Pacific Cod and the Broccolini and they were both pretty good. The side of broccolini was huge and I should have just stuck with the Cod dish, which had more than enough vegetables. The server did comp a glass of wine for my partner when she complained about the risotto.More

A trip down memory lane…an absolute culinary dream! The Lavender & Honey Ash Crusted Lingcod and Forest Mushroom Tart at the Notch8 Restaurant & Bar in the Fairmont Hotel on my Vancouver trip was a fairytale feast for the taste buds! 🌿🍯🐟🍄 @fairmontvan The enchanting...combination of lavender and honey infused the Lingcod with a unique floral sweetness, while the green pea & nasturtium velouté and spring vegetables adds depth to this dish. The Lingcod was flaky and melts in your mouth. The pea and nasturtium velouté formed the perfect base of the dish. So colorful and beautifully plated! It evoked a sense of wonder and anticipation before taking the first bite! The earthy flavors of the Forest Mushroom Tart and the flaky crust was simply scrumptious!! How gorgeous is this Wild Mushroom Tart?? It’s no surprise that such an extraordinary meal left a lasting impression. Moments like these are what make traveling so special and unforgettable.More

We had a standard American eggs & bacon breakfast. It was great as was the service. Price in American dollars was decent unlike most luxury hotels. Can’t speak to dinner meals.

We had a lovely booth table, yummy food - the charcuterie and cheese plate to start and then the salmon and the trout and a really good bottle of Sancerre. We had top service from Adrian - could not have been better! Highly recommended!

Truly a treat dining at Notch 8, Canadian contemporary fare at its best right here in downtown Vancouver. We had the prime rib recently and it was divine - tender, juicy and of course with all the fixings. Our kid loved it! Kitchen staff’s attention...to detail is evident. Have dined here a number of times now and have to say they never disappoint. They rotate select menu items seasonally I presume to incorporate the best of the local area so there’s often something new to enjoy. I need to mention - if you have a special dietary need, just get in touch with staff. With enough prior notice, I’ve found that they go out of their way to accommodate. Certainly, another plus that distinguishes this fine establishment. Staff are attentive, personable and work to ensure your experience is a pleasant, memorable one. Can’t tell you how much we love dining there with friends or family.More

First time here with other five friends for brunch buffet and our experienced was very good. We had a reservation so we got seated right away. The place was very nice and spacious. Seats are very comfortable to seat with. Staff are very friendly and...accommodating and always checked your table and your needs. Food selections were a lot. Did not even had a chance to try them all but the Salmon and Egg Benedicts were my favourite. Desserts are heaven and the creme brulee is my favourite. Very pricey but worth it.More

Had lunch here and enjoyed the crispy skin on the salmon along with the novel pea puree. The express lunch was good value, tasty and filling. Our server, Raluca, was exceptionally warm, friendly, helpful yet efficient and professional. Will come back!

Ask at the Notch 8 Hostess Desk. I believe there is a private room behind Notch 8 for Tea Service and private functions.
