Wow ! What an exceptional evening we spent under the magnificent stone vaults of La Lair3! We treated ourselves to five hours of pure gastronomic magic... and they spun off like lightning because the experience was so immersive! At the chef's table, and what a spectacle! From our privileged place, we were treated to a real culinary ballet. Chef François-Emmanuel Nicol's brigade evolves in a perfectly mastered choreography - it's fascinating to see this silent dance where every movement is precise, every gesture has its importance. The calm in the kitchen is impressive, in contrast to the creative energy that comes out of it. The dishes are real works of art, served on beautifully chosen plates. Every detail counts: the cutlery is of crazy elegance and the wine glasses are of incredible finesse. We loved it when Chef Nicol came to introduce us to many of his creations, sharing his passion with a touching simplicity. His cuisine is bold, creative, and brilliantly highlights Quebec local products. For wines, the Collection/Exception agreement offers really interesting and sought-after bottles, even if some pairings seemed less obvious than others. But frankly, it's a tiny flat on a perfect evening. Service? One word: exceptional! It's like a perfectly orchestrated dance between the room and the kitchen. The waiters move gracefully, anticipate our needs, and their kindness is really natural. If you are looking for THE perfect gourmet evening in Quebec City, go for it! But book well in advance for the chef's table, it's definitely worth it. Our advice: Take your time, enjoy every moment. This is an experience to live at least once in your life!

We eat at the NYC 3 Michelin Star restaurants e.g., Per Se and 11 Madison Park and the food and service at Taniere is equal to and even better than the NYC 3 Michelin Star restaurants. In fact the total dinning experience was much more enjoyable than any of the NYC Michelin Star restaurants. The food and deserts were incredible!

We discovered La Tanière 3 in August 2019. At that time we chose a regular menu and a vegetarian menu. We topped it off with a Collection Wine Pairing and an Experience Wine Pairing for a total of $517.38. In 2023, for the same choices: $1017.05. So, in just 4 years, 90% increase… Of course, I knew the price when booking and that was not the problem. What was most shocking was the fact that although my partner opted for the vegetarian menu, at the start of the experience, she was served 2 non-vegetarian dishes and the waitress came to inform her of this afterwards. Then, when tasting a wine from the Collection pairing, one of the wines was a real discovery and we even discussed it with the sommelier. The latter mentioned to my partner that it was the last bottle and asked her if she wanted another glass. Which she accepted. An amount of $30 before taxes was added to the bill for this wine. Given the 2 errors at the start of service with the vegetarian menu, the fact that the sommelier asked her if she wanted another glass without talking about price, and me knowing the price range, I would have expected that the glass of wine not be extra. The service is excellent, the food too. It’s up to you to judge whether this culinary experience is worth it and especially the cost…

The quality of the ingredients was good, but the overall taste was similar, and it was mainly a mayonnaise-based sauce, which was disappointing because it did not preserve the unique taste of the good ingredients. Although it is a high-end restaurant, I was very disappointed in the fact that customers kept leaving food, but they never asked if it was okay, and even though they said they would not eat the last few courses, they took the money without even asking why. This is an unrecommended restaurant run by someone who only cares about showing off and is obsessed with extreme chauvinism.

I was going to title this review next level tasting dining experience but honestly this was our fourth tasting menu in a row while we were here in Quebec we experience the finest we could find and this place is next level it’s untouchable attention to detail atmosphere service and of course The food was unimaginably fabulous and memorable. If you’re considering going out for a tasting menu dining experience at the top of your list! The Experience wine pairing was wonderful and the Collection was a nice step up only noticeable when serving side by side, my husband and I opted for the different path of wine and were able to compare them together together side-by-side for an even unique experience. You can’t go wrong here.

10 out of 10 is what La Taniere is, the most enjoyable atmosphere from the 3 progressive dining areas, spot on device from everyone to support the amazing tasting menu. The creativity, quality, description and presentation is spot on. This was our 2nd visit, it is not a cheap night out but it is worth every penny, it is an absolute dining experience that is worth it if you have the pleasure to visit the magic of Quebec City.

I was sadly disappointed after spending my 40th here. Based upon the reviews I had the highest of hopes. First the pros: PROS: - amazingly accommodating of vegetarians. I truly felt like a tasting menu was made for me and I wasn’t an afterthought -the mocktails were similarly consciously developed and I didn’t feel like I missed out on not getting an alcoholic beverage - the amuse bouche and entree rooms had really delectable meals CONS: - despite the fact that each room was more than half empty, they repeatedly came out to describe a dish while a table directly next to us was having a dish described to them. The noise reverberates on the brick walls and it was incredibly difficult to hear. I had to ask three times for them to wait to explain our meal and it kept happening. - seating - I mentioned that I strongly preferred a quieter area after the first room and the first table we were offered was again right by two tables (despite there being a multitude of open ones not on top of any others). After requesting a booth, which we were given, a couple who came in after us was able to receive a corner booth (much more insulated and the guests could sit closer together if it was too loud). Finally in the dessert room we were sat 2 feet away from a loud group of 10. I asked if we could sit in a 4 top on the other side of the room. While I understand we were only 2, the restaurant was half empty. We were told no and had to deal with the noise. A four top didn’t appear the entire time we were in the dessert room to fill those tables. - desserts - there wasn’t a single dessert I enjoyed in the dessert room - which was a very disappointing end to the meal. I’m very much a sweets girl. Just a note that you may want to have a backup plan for a dessert if that is a priority for you. Despite the fact that I barely touched the one dessert with more than one bite, there was no follow-up. Overall, a lot of the food was very innovative and good, but I was really disappointed with the noise levels and how my requests to be a) paced so the explanations wouldn’t overlap and b) sat a bit away from people would be handled.

I have had dinner several times at the Légende restaurant...which is part of a group of three restaurants. Every time I have been there it has been an impeccable experience. This year, we decided to discover the Tanière restaurant...... according to my little experience of restaurants, it is one of the best restaurants in Quebec....vaulted cellars, personalized experience, atmosphere, wines, impeccable dishes and tasty, perfect services. I have nothing to complain about...apart from the non-alcoholic drink offered at the very beginning, everything was perfect...95% rating Even if there is a price for this perfection..... shall we come back? = A BIG YES Looking forward to trying the 3rd restaurant: l'Orygine Congratulations to this team!

The perfect place if you want to live an extraordinary gastronomic, artistic and sensory experience. Perfect for special occasions or just for the pleasure of an immersive gastronomic experience. The service is impeccable and attentive and the decor contributes perfectly to the atmosphere. You should know that there is no menu and no choice to make. It is a gastronomic journey executed in 7 services accompanied by mouthfuls and delicate attention. The menu involves enjoying the delicate combination of flavours. The great success of this experiment is based on a judicious dosage of quantities and flavors. The portions are just perfect and consistent in the number of services. Same goes for wines. In short, one does not come out intoxicated, neither on the verge of exploding nor with the taste to go eat something else. The food/wine pairing is really worth it because it allows to have a perfect marriage between food and drink. There is even a wine service. In this case, it is the dish that accompanies the wine in a sublime and subtle fusion. The menu is greatly inspired by Quebec terroir, which makes it even more unique. We took four hours to live this wonderful course and you have to plan about 900 Canadian dollars for two people with the food/wine agreement. Obviously, the price is consistent and equivalent to any very high-end restaurant. On the other hand, La Den3 rivals and surpasses many Michelin-starred European restaurants where we have already eaten.

We visited Taniere3 during a weekend visit to Quebec. This ended up being a top experience for us. Everything was perfect, the food, the service, the little surprises along the meal journey, and the venue was also beautiful. The way they moved you through the space for each portion of the meal was also like a real journey. Zero complaints or suggestions even, I would not suggest to change a thing. Definitely recommend this place highly!

I read MANY reviews of restaurants before we came to Quebec City. This restaurant stood out. I am currently on an rx which prevents me from enjoying a glass of wine with dinner. Taniere has a non-alcoholic drink pairing which people were raving about in reviews. Add me to that crowd. Start to finish, this is the best meal we've ever enjoyed anywhere. The setting was beautiful, in the vaulted stone rooms below ground. Every detail was perfection. The service was friendly but professional and helpful. The food was mind-blowing. My non-alcoholic drinks matched perfectly to the course served with each. My husband LOVED his wine pairings, and had upgraded to premium, but he, too, thought my drinks were ridiculously wonderful. 10 courses (but you get little amuse bouche, so it's more) were not too large to enjoy without being stuffed. The key is that they use locally sourced recipe items, and everything is fresh and delicious. Yes, it is expensive, but worth every penny. So many people serve you, remove plates, COOK, etc etc. and they all deserve fair compensation. We wanted to come back for Christmas so our foodie grandsons could enjoy it too, but we couldn't get a flight that worked. But we know we will be back. It's awesome, and I don't use that word lightly.

Restaurant entrance is very hard to find; once inside the adventure continues. Culinary creatives prepare the finest tiny delicacies with the most obscure ingredients. Each dish is delivered to table with panache and an explanation of origin, ingredients, etc. More than a dozen tasty courses over the course of a couple of hours. Cost makes it either a very prohibitive or a very special once-in-a-lifetime experience.

Yesterday, it was our 4th visit to La Tanière, and it felt just like the very first time. This place is magical, the service impeccable and attentive, the flavors delicate, the dishes exquisite, evoking vague but happy memories. Truly, it's our favorite restaurant in the world. Nothing compares, and it's an experience one never forgets. It's definitely a must-try in a lifetime! Thanks again to the entire team for making us live this, time after time. 🥰

Our dining experience totally met our expectations. The food was reminiscent of seafood season at Noma and the service was close to our experience at EMP. We booked closer to the date because it’s hard to predict whether a travel plan would actually come to fruition or not because of covid, and according to their website, they charge a non-refundable deposit. It wasn’t a problem getting a reservation a week before, unlike the restaurants I mentioned above where you need to book months in advance. We received a code to enter into a keypad to get in the restaurant. Make sure you don’t arrive too early. We had a 5pm reservation and couldn’t get in until about 5 minutes before, and it was rainy day too! The first dining room is where they serve welcome drinks and a rapid succession of amuse bouche.. They’re all delicious, but my favourite was the oyster. They also ask you if you want to partake in wine pairing at this point but we opted to see the wine listing instead and bought a bottle instead of the wine pairing. They do have a pretty extensive wine list but they didn’t really mention it until I asked. After the amuse bouche, they move you into the main dining room for the main courses. There was a nice variety including seafood and venison. I was definitely full by the time the meat dish came! All the dishes were delicious and sourced locally. After dinner, they move you into the third room for dessert. I’m not sure if it’s because I am full, but this is where I think they can do a little better. The petite four presentation was beautiful and some of the items were unique and tasty, but I wasn’t blown away by it. All in all, I thought it was worth the splurge and would definitely recommend it!

Impressive underground vault restaurant. The « experience » begins with starters and drinks in the first vault. All were good, not exceptional. The bar section is in this area and the busy waiters rushing to and from the bar reminded us that the service is not quite up to par; we were uncomfortable and felt rushed. Service was inconsistent; some waiters were great and others, ok. Nevertheless, we were excited to discover what this restaurant had to offer. The following vault was where the main dishes were served; some very good and others, not very memorable. All meals are served in unusual plates and bols adding to our delight. Plating however, fell somewhat short of our expectations; no eatable flours, high mounted arrangements or exciting colorful ingredients to blow us away. Dishes that some previous diners posted on Internet looked much more appealing. The waiters rehearse how to present each dish cause we hear them repeating over and over again the same thing at every table (including the same jokes!). We chose the alcohol « experience » to accompany our dinner and for the most part, the wines were good. Serving a Xeres at the end of our meal as well as a vermouth with dessert was a miss for us. Overall, we enjoyed our experience, but would not be back; the dishes, though good, did not wow us. For the price per person of 175$ for the meal and 110$ more for the wine, our tastebuds should have been in culinary heaven; this was not the case. The service is inconsistent depending on the waiters and the forced break half way through the meal to send us off to the washroom is just weird. Next time when I am pay this price for a meal, I will search for restaurant with the matching criteria: Michelin stars.
