We do have dedicated pans for our GF and are exceptionally concious with our gluten free product line.
When preparing GlutenFree items we focus solely on that and have a very clean work space.
Having said that though, we are a mainstream bakery. Certainly there is flour in the air, and other staff may be working on non-gluten free items at the same time.
As well, our pastry case is not designated Gluten Free therefore it is a shared space.
We have had great success serving gluten free clients and it is a major part of our business with many happy regular clients.
What I would suggest is to come in and have a talk with Carol, Maureen or Tanya and see which products would be best.
Although we are excellent at what we do, it is definitely at the sole discretion of the consumer if they feel the risk is too great.
