Fil'O'Fromage restaurant and traiteur in Paris near the Francois Mitterand Library is the answer to a cheese-lover's prayer. As artisanal cheeses become rarer (cheese making and keeping is a labour-intensive artform not suited to the media studies generation), passionate experts like Cherif Boubrit, the guiding spirit of Fil'O'Fromage, become more precious. He tastes his dozens and dozens of beautifully-kept cheeses every day and pairs them perfectly with one of 130 wines so that you, the client, can benefit from his great expertise. The restaurant is a relaxed and buzzing affair, with wooden tables and chairs, a constantly-changing display of art and photographs, and musical, poetic and theatrical soirees. What to eat? Have the Assiette Gourmand: three varieties of cheese with three kinds of charcuterie from the same regions. And have the wines to match, of course.
