This is supposed to be the best restaurant in Chile, and one of the best in Latin America, and we had a very good expectation, ordering the 15 course full menu with wine pairing. Wow! I can certainly see why this place is in the top 50 restaurants in the world again. The creative work they do with their food is extraordinary. We had a wonderful meal, enjoying the 15 course degustation. Every course (except one i think slight missed - my husband though thought not) was a superb, unique experience using local, quite often not often known or used, local produce. Make your reservation for this place for sure. It was in the top 50 restaurants in the world so was on my list as soon as I booked my trip. Restaurants on the World's Best 50 list tend to either be molecular gastronomy tour de forces or ingredients showcases. Borago is the latter with very subtle flavors derived of ingredients from the entire country. Great service and tasty food.

Wow! Borago is an amazing dining experience, the food is creative and inventive and delicious. Being on the Worlds 50 Best Restaurants list speaks to Borago's credentials and also why there are such polarising views of this restaurant on Tripadvisor. We got the 15 course food tasting with wine pairing. The experience was great, the food incredibly innovative, and my husband and I both loved how dedicated they were to staying true to Chilean traditions (with a modern take obviously), Chilean ingredients, and Chilean wines. Went for our wedding anniversary (17th). The place is minimalist with design touches, i think they could replace the cheap and dirty alumninium window and perhaps have some music (considering they have a speaker set up).
