This is a 8 table restaurant that serves fresh as it gets sushi. The bar is open and the setting is perfect. The service is kind and helpful. Make a reservation, it fills up quick.

Most of the Sushi in Quito is loaded with ingredients, Californian or Peruvian-style. Very little actual Japanese sushi to be found—except in Shibumi. Many of the sparingly used (like it should be!) ingredients are, however, local and inventive. This is what makes Shibumi special.

Fresh as can be; this may be the best sushi you will ever enjoy. The omakase tasting route was fun, with stunning presentations. Each item was proudly and dutifully described by the chef. The Shibumi Salad is a must have starter.

The menu changes daily based on the market's finds, and the beer selection rotates weekly to highlight our latest discoveries.
