Yes, truly, the wine pairing dinner in the Cellar at DIVA was so delicious we ate it not once, but twice (will explain at the end of the review). Head Sommelier, Jerome and the Head Chef have worked hard to deliver 'Menu Hedoniste' an imaginative...and delicious 5-course menu and wine pairing, served in the private dining area called 'The Cellar'. This is a truly spectacular 4-5 hour entertainment that goes beyond just eating and drinking! Jerome's passion for wine is energising and he brings the story from the wine maker to the table, as well as a geographical tour (of France in this instance), and entertaining anecdotes along the way. He is ably supported by the lovely Emma - a very petite waitress delivering our food and explaining the courses and adding to the merriment of our evening. Several weeks have passed since our first dining experience, but I can still imagine the biscuity Delamotte champagne served with a well seasoned steak tartar.....a 'flinty' Chassagne-Montrachet with a 'cannelloni' of avocado, tuna and local Giraffe crab; On to Alsace and a Riesling to compliment the Black Cod Laska with a creamy delicate Thai sauce and then the Wagyu Steak Rossini served with a full bodied red Cote-Rotie. The evening was finished off with a wonderful creme brulee and a 20-year old Maury porty-desert wine. It is clear that Constance Hotels have made a significant investment in their wine cellar and in the Sommelier Team that supports it. The wine list has a broad selection which should be able to satisfy all tastes and budgets? The team are incredibly knowledgeable and when we were not dining in the cellar, they were able to introduce us to other interesting wines we would not have selected on our own. We actually found it far more relaxing to set our budget and let our Sommelier make the decision! We had such a fantastic evening in the Cellar, we were desperate to repeat the experience again on our last night. Jerome kindly said that he and the Chef would work on making some menu changes so that we were not eating the same menu again which sounded wonderful.... The Cellar is very exclusive and with such limited availability, advanced booking (well about a week or so?) is required. So you can imagine our sadness when we realised that our last night wasn't the Monday we had booked for, but the Sunday which was already pre-booked by another couple :-( Jerome being the perfect host and problem solver, quickly identified there would be a social 'fit' between us and the other couple and sought their permission for us to join them on the Sunday Evening! Naturally, as it was their evening we were joining, we had the same menu again and enjoyed the taste sensations all over again - this time with the added enjoyment of having another couple as animated as we were about the experience! We're eternally grateful to Jerome for his thoughtfulness in making this happen, and equally thankful to Mr/s St Claire for allowing us to crash what was their last evening too!More

The food is so inventive and absolutely sublime with an incredible wine selection. Two highlights. First is the cheese and chocolate room. Second,...the marvellous baked Alaska. Yum!More

The DIVA ist part of the Constance Lemuria Resort and boasts possibly the best staff, Chef and Food in the whole of Seychelles. The a la carte menu features wonderful creations of local dishes fused with international cuisine. We went there twice and everything we...had was simply perfect, the tastes, the combination of flavors and also the presentation! Our kids also loved your presentation of making the butter. Thank you for this whole tasty experience and your highly appreciated flexibility on our last evening!!More
