In search of ... the best happy hour in Panama. Wait, wait. Didn't I "award" best happy hour to Buena Vista a few days ago? Well, I went back to BV a couple of days later and, let's just say that the "best happy hour"...spot is wide open again.
Well, "wide open" for about 30 seconds. Enter RAW FUSION.
A few folks recommended RAW saying they have the best sushi in town. Honestly, might be the only sushi in town! But, as I found with Indian (OM) and Spanish (Bocas Gypsy) being the "only" doesn't mean they lower their standards.
Back in the days when I ate fish, sushi was my go-to special treat. But when I gave up fish, my beloved sushi restaurants fell off the A-list.
That was then...The word on the street, literally, was that RAW is vegetarian friendly without sacrificing variety for the omnivore and the pescatarian. And so it is. About a third of the full menu is vegetarian. And, there is always a vegetarian, if not vegan, option on the $6 happy hour menu.
The happy hour menu occassionally changes...a very good thing. After trying and enjoying different vegetarian offerings on two consecutive evenings, the owner surprised me with Jungle Roll from the full menu at happy hour price. The only thing I like better than great food is great food at a great price! I took him up on the generous offer.
Jungle Roll is a vegetarian sushi with the sticky rice on the outside. I prefer to eat sushi with my fingers but sticky rice is, well, sticky. So I used the chopsticks. A small sacrifice.
The first thing I noticed when I bit into the Jungle Roll was a distinctive crunch. Could have been the crispy kale or the bit of fried tofu. Either way it was marvelous! Avocado added to my delight.
Next to caress my pallet were the ginger soy glaze and the spicy mayonnaise. Subtle yet integral with the delicate flavors of the kale, tofu, and avocado.
And, last but not least, I noted an unexpected Earthness to the kelp holding it all together. Checking the menu I found that the variety of kelp RAW uses for the Jungle Roll is Wakame. Maybe you'll like the flavor or maybe you'll like that in a small way you're helping eliminate an invasive species. Wakame is on the top 100 "Global Invasive Species Database." (Ok, the Wakame used in restaurants is probably cultivated not harvested in the wild. But, hey, if it feels good to think you're helping, go for it!)More
We went their last night. Was really nice I had raw crunch roll delicious. Husband not a sushi fan had Pad Thai noodles loved them. Did not leave hungry. Oh and the spicy tigers we couldnt decide if we liked or not. very different taste...profile. Definitely would go back.More
They're the best sushi restaurant of the island.
The place has a great atmosphere (a mix of bar with island vibes and Japanese restaurant), a terrace with a great seafront view.
The food is so natural and tasty.
The customer service is great and so...kind (sometimes by the owners).
I went there recommended by a friend and locals; and now i recommend it 100%.More
Not sure why all the great reviews. We ordered the spring rolls which were average for an appetizer. My husband ordered the beef poke bowl. He rarely complains about his food, but beef was so chewy we had to laugh about it. I had the...tuna sashimi which was good, but not a lot of it. Pretty pricey for what we got. Other people ordered the sushi, which looked good and thats most likely what we should have ordered. Service was weird too. My dinner came out much earlier than my husbands.More

It is rare that you find an up and coming business that has maintained the mantel of the previous owners as well as hector and marniela. Their staff is as seasoned as their best dishes. They take the best that bocas has to offer and...adds a delightful twist. They welcomed me to the bocas del toro community and I’m sure my experience here will be more unique and memorable that it would have been due to their guidance and friendly recommendations.More
