Firstly, the food was fantastic. Each course as good as the last and of a standard you'd expect from a michelin starred restaurant. Six of us visited for a celebratory birthday lunch. It was our first visit and we were all impressed with the place and especially the wonderful food. Everything was presented beautifully and tasted amazing. It wasn't too busy and the staff were delightful. It is an expensive restaurant but there was a 25% discount which made it more reasonable. This is my go to restaurant in Sussex if I'm fed up eating in so-called gastropubs or I want to stop off on any London to Brighton car or bike run. Had dinner with my wife and a friend the other evening. The bar for pre-dinner drinks is very pleasant and comfortable but the dining room is now modern and soulless. How can you justify £16 for a glass of wine which was actually quite average tasting? The food was ok nothing special but the service was slow and simply not good. The food for both diner and breakfast the next morning was the type you reminisce over years later. All locally sourced and made from scratch. Enough extra amuse-bouche to make you feel pampered and excellent service from the knowledgeable staff

My wife and I thoroughly enjoyed dining in the restaurant last night. We both had salmon to start followed by the beef which came with excellent duck fat chips. Puddings were lemon meringue pie and blackberry and apple crumble. Had pre-booked (essential) for lunch on what was a wet and windy January day. We were welcomed at the hotel entrance by the manager and escorted to a table in the bar for pre-lunch drinks, where the menus were provided to us. James, the restaurant manager, again very kindly arranged for me to have a pescatarian tasting menu. Each course was excellent in itself, but the overall arrangement of tastes and flavours was truly outstanding. The service as usual was faultless, so together with a wonderful setting (and seating plan) the whole evening again was well worth a lengthy drive.
