We were "on the road" from Canada to Florida, and happened to stop in the small town of Weston for an overnight stay. We checked the reviews and decided to eat at "Thyme Bistro". No regrets! Completely wonderful meal and worth every penny! The Parmesan Potato Crusted Salmon and the Crab Stuffed Portobello special were amazing. We left feeling content and completely satisfied.

At the end of a long drive, this restaurant on a side street in Weston was a welcome oasis of good food and excellent service. Owner/server was a pleasure to deal with. Her wine and food recommendations were spot-on. I would go back here anytime.

The food on other's plate looked good but the "music" was painfully loud. We asked (four times!) the awful music (local radio station) to be turned down. Dark inside, pleasant wall hangings and decor, sweet waitress with quick help, wonderful chicken and biscuits and gravy. A great quick lunch in a hidden spot in the middle of town.

While visiting Appalachian Glassworks, we ask for a lunch recommendation, and we're told that "the Thyme Bistro may not look like much on the outside, but food is incredible ". One of the best recommendations we received, as the food and service were awesome!

Don’t be put off by the wrong side of the tracks situation. Or the dark “atmosphere.” Or, in our case, the lack of an appropriate wine list. Go for the food. We had a late lunch here while passing thru town. Split a Greek pizza appetizer which was truly inspired. Only $8 with top quality ingredients. We were passing through Weston heading home from vacation. Hotel staff recommended eating here. Wasn't impressed upon arriving outside but WOW is it a great place once you go in.
