Disappointed. Our first night on vacation and was excited for excellent red chile sauce. The food is expensive with guacamole at $12.00! Not even prepared table side. Entrees weren't real temperature hot and the red chile was below par. We watched other entrees come out of the kitchen that didn't look overly great. If you want real down and dirty... More

We were in Santa Fe for 2 nights and ate there both evenings. The food is so authentic and absolutely delicious! Try the guacamole! Our waiter was so personable, and took extra care to make sure we had a great evening!

The Chicken Mole Rojo was to die for! It was almost as good as my mom's! I only wish there was more of it. My wife had the stacked enchiladas and loved them. My only regret was the lack of a tequila selection, as they don't have a full bar. If you're a beer lover, you'll be happy.

We've enjoyed eating here at least four times, twice in our last visit - breakfast and dinner! Love the blue corn enchiladas, homemade chips and salsa are excellent. Wouldn't miss this place. Walking distance but not on the plaza, we've never had to wait to be seated.

Our hotel suggested we try Casa Chimayo for dinner on Labor Day and we are so very glad we did!! We arrived about 5:45pm to "beat the crowds" and were seated immediately. We asked our waiter for his suggestions for dinner and we ordered based upon his recommendations and were very pleased with our selections. I ordered a Calabicita Blue... More

6 friends traveling to Santa Fe and this restaurant was recommended to us by a previous customer. The wait staff was so personal and friendly and joked with us answered questions...and the Blue Corn Tortilla with the Christmas Salsa was delicious and the tortilla soup was excellent. Our friends shared the heirloom tomato salad and they loved it. I would... More

The restaurant was recommended to us by a friend so we went in for dinner the first night of our visit to Santa Fe. The food was just OK. Service was OK. Unfortunately we expected a tasty treat and were disappointed.

We had dinner here right before heading out to the Opera. Lots of nice food choices, pleasant outdoor ambience, and really helpful wait staff made for a nice, quick meal that didn't break the bank!

We got there a little early for dinner. The Indian Market was that weekend and we didn't want to go to the square in fear that we would have to wait for a table. When we got there the owner was at the front door on her laptop. A little weird but she greeted everybody coming in and wished us... More

Description
Casa Chimayo’s traditional approach to preparing authentic New Mexican cuisine, or “Comida de Nueva España,” as Don Timoteo, the patriarch of the restaurant, refers to it, comes from his commitment to using Grandma’s recipes and local ingredients.

Guy Fieri featured Casa Chimayo in a segment titled “Aces Of Authenticity,” on his popular Food Network show “Diners, Drive-ins & Dives, showcasing their popular blue corn enchiladas!

New Mexican cuisine has evolved from a blending of Spanish and Native American ingredients, resulting in a culinary experience like no other.  Don Timoteo is proud to serve authentic New Mexican dishes using fresh, local ingredients such as: red and green chile, corn, beans, blue corn, posole, tortillas, tamales, atole, and more!
