Stayed at the Marcus Whitman on business and what very surprised by the quality and variety of the hotel hot breakfast. Very different from the typical hotel breakfasts served at the chains. Plenty to eat from french toast to monkey bread.

Good selection, fresh and plentiful. Ate there 2 mornings (one weekday, one weekend) - no problem with the weekend crowd.

Surprised for it not being a Sushi restaurant but very pleased with the roll. We also had the Brussel sprouts and it was amazing!

I don't know but I would think you could call the restaurant and ask. If they don't offer such a flight, I suspect they would put one together for you with some advance notice.
