It doesn't really get better than this. The restaurant has 2 Michelin stars and deserves them. I've eaten in 3 Michelin star restaurants that weren't as good. it felt like the real Bras experience in Laguiole - few years ago. the consistency of the Bras philosophy and the mastered experience by GM Guillaume was a great pleasure and experience. Mind-blowing food and excellent service, with an impressive view over the lake below. Had a 6-course meal with numerous creative food items I've never seen or tasted before!

人都會做夢,人也會努力的實現美夢。然而夢有大有小,大夢者,謂之強者,會根據不同興趣與不同職業,實現他成為霸者的夢想。小夢者,不如大夢者的野心,只要能做到一點我曾經沒有想到過的事情就十分滿足,而我就屬後者。 兩三年前開始進入美食的夢幻國度之中,曾經看過一部DVD中文譯名叫做「米其林廚--神美味的傳承」(ENIRE LES BRAS),故事則是敘述味在法國拉奇歐(Laguiole)的米其林三星餐廳Michel Bras父子之間傳承的故事,當然這個故事並未完結,仍然在繼續,而其中一個橋段就是講述在2002年他們在日本北海道洞爺湖(Toya)開了海外唯一一間Michel Bras分店,目前全球也只有拉奇歐本店以及北海道洞爺湖分店等兩間餐廳。 就在一個多月前,我確定了北海道之行,請準備同行的表妹幫我訂了位,其實心裡亦有不安,畢竟語言不通;儘管如此,我依然要實現我的夢想,用小小的夢想支撐前進的勇氣,用對於飲食的知識來克服語言不通的麻煩。 關於Michel Bras 「法國廚神」Miichel Bras 1946年出生於法國中南部布拉克 (Aubrac)拉奇歐小鎮歐,他是世界非常知名的米其林三星廚師。年少時,因為是家中的長子,對於未來也沒有想法,於是跟著母親學習做菜並接掌了家族企業,不斷修行餐飲技術的他,不但成為首位拉奇歐打入巴黎廚藝決賽的廚師,經過他的努力經營,隨後獲得法國米其林紅色指南一星、二星,隨後在1992年位於山區開設了現址餐廳以及旅館,這裡綠意盎然,散發著幽靜及充滿著陽光,空氣中充滿了香草的香氣,非常優美。餐廳在1999年榮獲米其林三星餐廳的榮耀,現在早已是米其林三星餐廳的常客,成為全世界最好的餐廳,且擁有赫赫有名的高級旅館。 繼承美味的兒子Sébastien Bras與其父親同樣有著對美食的熱情以及敏感度,他的料理同樣注重大自然的節氣,同時他很有自己的想法,也非常用心與專注於美食創作上,現在也是Michel Bras餐廳的主廚。 Michel Bras Toya 洞爺湖Michel Bras於2002年於溫莎酒店(The Windsor Hotel)的11樓開幕,這塊地方簡直複製了位在拉奇歐山區的Michel Bras,在這山麓間同樣是綠意盎然,充滿了青草的芬芳,溫莎酒店遠瞰著洞爺湖,畫面十分美麗。 Michel Bras非常重視與當地農產業者合作,同時選擇洞爺湖的原因,也是在於此地與Aburac十分相似,同樣有豐富的食材及重視季節性,食材的鮮度、色感以及農場,與拉奇歐之間產生共鳴。餐廳也代表著一種地域性,這也是Michel Bras的料理哲學之一。 由現任主廚Simone Cantafio及他的團隊以精選的優質北海道食材並透過與當地農場合作,讓Michel Bras Toya繼承了Michel Bras料理哲學,同時也代表了一間純正的北海道餐廳。 行政主廚Simone Cantafio 現任北海道Michel Bras行政主廚是Simone Cantafio,他生於時尚之都義大利米蘭,並畢業於Carlo Porta school for culinary arts and hotel management,畢業後分在義大利、法國、澳大利亞、英國各個世界著名的酒店工作並積累了豐富的經驗。 曾在義大利第一家米其林三星級餐廳GUALTIERO MARCHESI、法國薄酒萊地區的米其林三星級餐廳Georges Blanc積累經驗後,2010年終於在他多年夢想的餐廳Michel Bras工作。 Simone在bras父子的指導下,徹底領悟了所謂為「在奧伯哈克大自然中學習烹飪的獨特廚師」並開始盡情吸收經驗。 Walk 為了表示慎重與尊重,我盛裝出席,在我到達11樓,進入面對餐廳正門的長廊,遠方看見了經理Guillaume正前往門口迎接,此時我心想,他怎麼會知道我是要來Michel Bras餐廳的呢? 進餐廳後我的習慣都會先表明身分,好讓餐廳知道我是訂位者,而我真的有來。經理引領我到安排的座位,天啊,這位置與視野與影片裡一模一樣,餐廳環境寬廣幽靜,幾乎只有音樂與用餐詢問的聲音,十分寧靜,也是認真品嘗美食的最佳環境。坐下後,侍者地上了溫濕的毛巾,而後經理送上了今日的菜單【Walk】。 在飲料的選單上讓我比較難過。因為開車,不能喝酒,引此忍痛割捨了酒精飲品。我也選了一支小的Badoit氣泡水作為飲用水,緊接著期待今日的料理。 桌邊脆麵包片 與法國餐廳同步的Michel Bras Toya,無論就餐桌擺設與法國拉奇歐一樣,桌上有片餐點脆餅以及奶油,我撕下一小塊品嘗,這是應該是如影片中用牛奶冷卻後浮上的薄膜並將其燒烤成為餅,滿特別的口感。 北海道葡萄汁... The ala carte menu was limited and as a result we went for the tasting menu. The ingredients were very good and generally well executed but no surprises. Service fell below the usually very high standard in Japan. Server appears to be in rush to serve and not attentive enough,

I specially made a reservation via web for lunch during our stay in lake Toya at this 3-star Michelin restaurant for my beloved's birthday. Great combination of fresh Hokkaido produce prepared in the wonderful ways of Michel Bras. Wonderful setting, impeccable service and great French wine, a great experience.

We stayed at The Windsor Lake Toya with our friends for one night after our skiing trip so we can dine in this restaurant. It was definitely worth it. Had to try this 3 Michelin stars chef's restaurant. Using all Hokkaido products the food served was amazing. The pricing is pretty steep so for those visiting do prepare for it.

Food was great and service was impeccable! We had a very enjoyable evening and had great chats with the friendly restaurant manager, Guillaume. We will come back again for sure and maybe try their lunch and enjoy the magnificent view of Lake Toya which we could not see at night.
