We had a fantastic afternoon at Asador Etxebarri. Our expectations were very high but the 12-course tasting menu was even more delicious than we had anticipated. We started with a drink on the terrace and later proceeded to our table. After complimentary starters the tasting menu dishes with focus on local ingredients. came in one by one, all delicious and grilled to perfection. The service was personal and top notch. Chef/owner Victor invited us to visit him in the kitchen after our meal and signed our copy of the Etxebarri book. A truly memorable culinary experience, we will be back soon!

Here I come to evaluate gastronomic aspects and not other situations such as unexpected cancellations, without any justification and without the possibility of relocation... first came the return of the deposit and then the cold email of "we regret having to cancel the reservation..."... I imagine that There would be some influencer, celebrity or renowned chef who took away our table and our hopes, but the one who follows her pursues her and also gets her and we were able to enjoy a wonderful Wednesday in January at the Etxebarri, finally forgiving from the heart so much infamy and ignonymy and I Tears flowed at such apotheosis and glory on my palate and in my stomach… the environment, the Restaurant and the Service but above all the quality of the product permeates everything and Bitor's self-taught mastery with the embers makes the difference... for me the bufala mozzarella from Their baserri was totally surplus but there are dishes that brought tears to my eyes like the pulpits, the truffled egg, the palamos prawns, the taló del Unmade chorizo... the desserts were perfection... both the two-chocolate fluid and the ice cream Grilled with beetroot... as for the extras, the grilled caviar is indispensable and with the grilled elvers brought tears to my eyes And God exists in that kitchen.. The wine list was very well stocked and provided and even Bitor was very friendly and chatty. Now I understand how all the bad reviews come from people who have never been able to eat despite their insistence and get frustrated and upset. It is a myth of a place and the least commercial thing in the world. World but without marketing and very little hand, everyone wants to be there

It is true that it is a restaurant where it is almost impossible to reserve. We were lucky that a reservation was canceled the day before and they called us. It also coincided with Athletic's qualification for the cup final, two round days. I say that it is a unique place because I have not been to another steakhouse where you can taste so much good grilled raw material, being a true festival, and many products never seen before made over the fire such as eggs, eels, oysters, etc. . We took the tasting menu that includes many dishes and added the elvers and oyster. It is worth trying the elvers because they are unique, very fresh and fragrant when grilled, they are something masterful. I also loved the oyster, I thought that the smoke modifies its texture and makes it smoother and less viscous. This is also appreciated in the flavor. All the food very good. The famous chop roasted to perfection and not only by point but by the cut and quality of the piece. It is not matured as it is now, and it is better this way. It is true that I have already tried many chops and I was less surprised than other dishes. The kingfish is the same but I have eaten it grilled more times. Special mention also for the desserts. The one that surprised me the most was the one that I least fancied a priori: reduced milk ice cream with beets. The milky taste and sweetness of the ice cream goes very well with the beet infusion. I loved the wood-fired taste. As for the service, serious but professional and quite close. The waitress was very nice to us in the end and the sommelier was very honest, recommending very good bottles of wine, not inflated prices, taking into account the level of the establishment and the clientele, eminently a lot of people from Madrid dressed in shirts who will leave a lot of money in the cellar. . I was sad not to see so many people from the area but in the end it is a place that is visited by pilgrims from all over the world. In conclusion, a place that if you are lucky enough to go (reservation is complicated) is totally worth it to enjoy grilled cuisine with very meticulous craftsmanship, great product and where enjoyment is guaranteed.

We were a group of friends and tried the 265 euro Menu. They gave us several dishes, highlighting the excellent chorizo, and a mushroom toast that was outstanding and some prawns that were also exquisite. The rest of the dishes, sea bream and steak, were very good but like in many other Basque restaurants. The table service was somewhat slow and the sommelier was unprofessional. We ate very well but the price is excessive for the menu they offer without wines. I have visited restaurants of this price and they are at another level of cuisine and creativity.

Today we had a few pintxos after a walk in the area, as we had read that Sundays open for pintxos and we thought it was a good option to try the attention and take a look after different opinions. We were surprised when we arrived that the parking lot was full and we continued by inertia to the car in front parking nearby on a stand that went up to a hamlet wide enough not to disturb too much. When we arrived at the bar, we were directly in line to order, and we were struck by how tidy the service was. You can order pintxos on the bar and eat them outside but the rations are only on the table or on the bar that there were also a couple of places assigned. We didn’t think there was much variety of pintxos, and the price is 4€/pintxo, and we opted for octopus skewer, salad and tomato with mozarela and anchovy. The best the octopus, the tomato and finally the salad, although they are not spectacular as for the price they have, in the tomato above all you could see the quality of the product. To drink, two bottles of third without alcohol at 3€/each, we found it more suitable. I think the place throws more for fame than for the offer itself, since the rations we saw coming out is not that they drew too much attention, although the product is of quality.

For all of you wishing their reservation system was better and lamenting not getting in, you didn’t miss anything. The restaurant is 1 hour+ from San Sebastián so, a 2 hour round trip, so you really will want to go there. We have been wanting to go for 2 years and finally got in. I’ll preface to say we’ve been to many Michelin Star Restaurants all over the world. We’ve been to M-Star establishments where wait staff are literally standing by watching your table, jumping to pour another water or comb the tablecloth. The service at this restaurant is beyond poor. The staff is basically slinging food and bottles on the table, no explanation, no interaction, no nothing. The owner may as well have robots but they would be more interesting. Once a bottle of water or wine is ordered it’s Do It Yourself. We are perfectly capable of pouring our own drinks, but for 280 Euros per person for the tasting menu, we expected a higher level of service. The owner should send his staff to Madrid or Miami to learn what 5 star service is. The 12 courses were sometimes great and sometimes plain, like one simple sardine on a plate of oil. Cmon really? The highlight after 10 dishes of unusual seafood was the steak. It was good, with a wood fire smoked flavor, but it wasn’t incredible. We were just in Argentina 2 weeks ago and this steak couldn’t hold a candle to any steak we had in any restaurant there. The owner should travel to Fogo Asado in Buenos Aires if he wants to learn to serve steak. Lastly, and the worse, the restaurant was full of house flies, which is really gross. We spent the entire 4 hour lunch swatting flies off of our food, cups and table. Invest in some fly control! Once the bill came the waiter didn’t ask how we liked it, was everything wonderful, didn’t actually even say thank you. I can only assume the owner is resting on his laurels and probably relaxing in his Caribbean Villa while he rips off his patrons until the word gets out.

Bang average. We were fortunate enough to visit several Michelin star restaurants over the weekend in the area and the vast difference between here and elsewhere was that the staff were indifferent as to whether you were having an enjoyable experience. They were simply there to deliver your food and nothing else. Compared to other restaurants we visited the staff wanted you to have a great experience and we’re sorry to see you leave. I’m not sure anyone at this place was even aware we were there or had left. I don’t understand the hype as the food was average at best. To make matters worse we had to contend with several (two in particular French guests) that were more interested in Instagraming the whole experience and performing some kind of food blog…not for me I’m afraid…glad we went but won’t return.

What a joke this place is. The only good thing about this places was the pictures we took outside. Let’s start with the flies all over our food. The server had a huge nose ring that looked something she borrowed from a Bull. They will drop off the food at our table and they would disappear for 30mins mean while flies were all over my glass of water. No1 ever asked how was the food. They brought sardines straight from the can. You would think they would at least sprinkle some scallions to make it look fancy. Every dish was worse than one before. I can go on and on about what a horrible experience this was. We has travels the world and tried many many Michelin star restaurant and this place doesn’t come even close to it.

A menu of 260 euros, wines apart, in which they give you chorizo, a cococha, half an artichoke, an egg yolk, half an anchovy, a tiny piece of octopus with mashed potato, two Palamós prawns (very good) but spoiled Due to the absolute lack of salt, they tasted sweet. For main courses, a half portion of king vulgaris and two simply good chops, for ten people. We had to ask for one more, which was reluctantly served. The wine pairing, absurd, 5 whites, an excess and three reds. The comfort, below zero, I say this because of the cold we experienced, they offered us blankets that some of us used. In conclusion, DISAPPOINTING. I don't understand how it can be classified as it is. It wouldn't even make it into my top thirty.

We went on a Sunday to taste the pintxos and cupcakes that serve that day outside the €280 tasting menu. It wasn’t special because the pintxo de tortilla and salad I’ve tried better elsewhere, the bulltail dish wasn’t very funny. The lamb chops were certainly on point. The bill was expensive for what we ate. I expected something more original and better worked by such a renowned cook.

Better to plan a whole day to go to Etxebarri for lunch. Sitting at the table at 1 p.m., we left shortly before 7 p.m. after an absolutely memorable lunch (not without congratulating ourselves for having skipped breakfast to fully honor this monumental lunch). The place is sober and warm, offering a delightful view of the surrounding mountains. The service is efficient and friendly (special mention to the head sommelier, Mohammed, who is as friendly and helpful as he is talented in his art. His menu is magnificent, and rather reasonably priced). Lunch consists of an almost uninterrupted succession of dishes for more than 5 hours, with a second course kindly offered when we requested it. Each dish is a taste delight, and impresses with its great simplicity. Here the products, of absolute quality, are prepared very simply, but to perfection. Excellence in simplicity, an approach that contrasts with other very large tables.

“Estoy sin palabras”: at the end of an unforgettable lunch, in my mediocre Spanish I only managed to say these words, and then run to catch a plane and return home, after a trip that had the sole purpose of trying this restaurant . From arriving in this tiny village of three houses and from the first minute in this rustic-luxurious restaurant, everything seemed magical. The courses of food made from raw materials of absolute excellence, prepared with a disarming simplicity but which no chef would be able to repeat, have the flavor of wood, of embers, which enhances and does not cover the exquisite flavor of what you are eating; chorizo, anchovies, buffalo cheese (amazing), Palamos prawns, egg with truffle, the wonderful kokotxas, lobster, microscopic octopus, a Rey (extraordinary tasting fish) Galician cow chuleta, some unscheduled; four hours of delights, of pampering from an essential but super kind and efficient staff, from excellent wines in a menu that has so much good. The desserts are a worthy end, always great simplicity but exceptional goodness. Great restaurant, at the absolute top, hoping to be able to return.

This was the most amazing meal of my life. The setting is beautiful, the service impeccable, and the 14 course dinner was delicious (except for the cod bladder, but that might just be personal.) I wanted to do a review though to highlight how amazing they were with allergies - my partner has celiac and they did beautiful substitutions for him, and they did as well for my shellfish allergies. They don't advertise that they can be gluten free, but they even baked homemade bread for him. And I got caviar as a course instead of razor clams. I've never spent this much money for a meal before, but I'll never forget it.

Two days before our lunch reservations for three couples, we received an email notifying us that our reservation was canceled. Three couples flew into Madrid and were on our way north to San Sebastian which would have provided us a nice place to break up the trip and have lunch. I will never give this restaurant a positive review after this horrendous treatment. Their reservation department does not have a phone number that you can contact them with. Their behavior adversely impacted our two week trip in Spain and France. And yes, we have eaten there before.

One of the best restaurants we've been to without a doubt. It amply honours the Michelin star it holds. It is true that it is difficult to get reservation, but we were able to do it as we went with friends who know the owners. We take a tasting menu with red wine pairing expanded with angulas and caviar. Everything proved excellent, especially the eels, hedgehog, kokotxas, sea bream, meat and desserts. Impeccable service including wine selection. We liked it so much that before we left we made a reservation to come back in a few months.
