3-4 hours away, Marble Canyon is a fly fishing Mecca.

East Tropic Reservoir and the stream feeding it are good fishing,,,,don't know about fly fishing. It is on the road directly west of Bryce.

Boulder Mountain is known for its lakes, again don't know if it is fly fishing. It is on Hwy 12 just south of Torrey.

You might look through here for a start: https://utah.com/fishing/fly-fishing Most of those listed are in northern Utah where there is more water.

I'm not a fly fisherman but a good friend is and he fishes Asay Creek. Mammoth Creek and the Sevier River. All are located within an hour or two of Bryce. I don't think these creeks hold big fish but he does very well. Best to ask locally.
