I've been out with these guys.
Nice, local operation, conscientious. For beginners, heading out on to Tod Inlet is nice, calm flat waters, so a good place to learn to paddle.
I'll recommend Ocean River - they have been established in Victoria a long time and have a good reputation.

If it is your first time - I'd suggest doing a half day tour - they'll walk you through the basics and the tour includes equipment.

Neither of those tours are really 'wild nature'! One is in a very busy working harbour and the other is just offshore from a very urban area. Not to say you won't see any wildlife, but the area around Saanich & Todd Inlets will give a bit more of that non urban feeling.

I paddle board with Pacifica Paddle in Tod Inlet and agree with above, nice calm waters, I often see seals, jellyfish. It is so peaceful and beautiful there. The other areas can get rough. Pacifica Paddle really look after you and are super friendly! They are located just past the Butchart Gardens so if you wanted to combine Butchart and kayak!
