Is it possible to easily do this on your own coming in by cruise ship?

It should be. You just have to get yourself to and from Paignton and there are several buses an hour. The main bus station in Paignton is just a few minutes walk from the steam railway station.

Do pay close attention to your timings.

Where exactly is the ship docking? Or tendering? That will determine whether the trip will be easy, difficult or impossible

Where is the cruise ship anchoring up and what are the arrangements for getting ashore?

You may need to book your ticket in advance as it is very popular.

It is about 15 minutes drive so you should be OK if you pre book a taxi and get to Paignton station for the earliest trip.

We did this ride to Kingsbridge about 15 years ago and from memory it is about 30 minutes.... Very attractive trip.

As wirewiper mentions, it's about your timings. You should manage a couple of hours in Kingsbridge.

It’s Kingswear not Kingsbridge. If you have time to spare take the passenger ferry from Kingswear to Dartmouth and have a look around there.

There isn't a lot to do/see in Kingswear, so if time allows, it is definitely worth catching the pasenger ferry across the river to Dartmouth.
